I made these. They were awesome!
The cookie has a little bit of a cake-like texture. The flavour is outstanding! Not too sweet.

Gonna try the shortbread cookie next.

I just knew I wouldn't be able to contribute to this topic, but I always look for easy, cheap and healthy snacks to make myself out the foods I eat and here is one I got from BlogilatesTV today (she actually posted this today) and I made it for breakfast to put along with my egg whites.

1 ripe banana
1 cup of oats
add as many raisins or craisins you want
smush it all together and ball them up into individuals
put on a sprayed cookie sheet or use coconut oil or olive oil
bake at 350 degrees for 15-20 minutes
Voila!

Not a problem at all.

I have three recipes picked out:

Cranberry Cornmeal Cookies remake (I made this a few years ago, but have since given up wheat as well as becel margarine and sugar... so it will be interesting to see how these turn out)
I hope I can find dried, unsweetened cranberries since moving... the health food store is sort of small here; not a lot of bulk dried fruits.

I like the powder; just more used to using it. I also use a stevia blend (stevia and erythritol) for recipes that require more of the bulk of sugar.

The bars I use are 100 grams. Also, the coconut milk will sweeten a little bit too.

Just start with 3-4 drops. You can always add more.
I don't use drops very often. If I were using powder I would start with 1/8 tsp for an entire chocolate bar.

Excellent! Glad to know that. I have stevia drops - any idea how much I should add to the 100% cacao? I haven't used it yet so I have no idea of what is a reasonable amount to even start with.

I just came across this recipe (It's not a cookie, but it is close) Unfortunately it isn't sugar-free due to the chocolate used in the recipe, but I thought I could try to use 100% cacao and perhaps use dates for the sweetner.

Chocolate Ganache Cherry Walnut Truffles
Vegan, Gluten-Free, Dairy-Free
Makes around 3 dozen Truffles
12 ounces 70% organic dark chocolate (I used Theo Chocolate dark chocolate orange bars)
¾ cup organic full fat coconut milk*
⅛ teaspoon Himalayan sea salt
⅛ teaspoon cinnamon
½ cup finely chopped dried cherries
1 cup finely chopped raw walnuts

1. Chop the chocolate bars into small pieces with a knife. Place the chopped chocolate in a heatproof bowl and set aside while you prepare the coconut milk.
2. In a small saucepan, combine the coconut milk, sea salt, and cinnamon and bring to a simmer over medium heat.
3. Once the coconut milk is hot, remove from heat and pour over the chopped chocolate. Let this mixture sit for a minute or so to allow the chocolate to start melting. Stir the chocolate with a large spoon until all the coconut milk is mixed in and the ganache looks smooth and creamy.
4. Stir in the chopped dried cherries, cover bowl and place in the refrigerator to cool and set. This should take around two hours or more.
5. Once truffle base is done chilling, remove from refrigerator and using a spoon or melon baller, scoop a large tablespoon of chocolate ganache and roll into a ball.
6. Place truffle ball in chopped walnuts and roll around until the truffle is completely coated in walnuts. Repeat this process until all the truffles are done.
7. Enjoy immediately or place truffles in the refrigerator covered for up to 2 weeks. If you refrigerate the truffles, remove and serve at room temperature when you want to eat them.
*It’s important to use full fat coconut milk in this recipe to get the right texture for truffles. Light coconut milk will not work in this recipe. You can also try coconut cream for a more decadent version. aharmonyhealing.com/chocolate-ganach

Great challenge! I want to make cookies with my niece when I go for my Christmas visit, but I have given up sugar so I wasn't sure recipe to try. Now, I am even more motivated to find a sugar-free (refined sugar, I do use things like whole dates or bananas or apple sauce for sweetner) cookie recipe.

So, I was talking to my mom the other day and she and my sister are challenging each other to a healthy cookie bake-off at Christmas. My dad is a fussy, clean eater and my neice cannot eat soy, so I decided to join the challenge.
Dad is gonna do some taste testing. lol

So, I thought this would be a good idea for a Holiday Challenge.
