My DH and I have been juicing veggies every morning for a couple of weeks now. We used to do it all the time and then we fell off the wagon for a year or so. We are back on!!

I have also found a way to chow down the pulp that is left--I drizzle on some olive oil and some vinegar, add a little s & p and stir it up. I drink my juice and munch on the pulp.

We juice no less than 6 of these things every morning:
carrots
celery
chard
kale
cabbage (all kinds)
bok choy
beets
parsnips
turnips
rutabaga
bell pepper
spinach
romaine lettuce
parsley
broccoli
cauliflower
dandelion greens (from our own yard)

I eat no less than 2 large fruit servings during the day and then I usually fix myself a salad for dinner.

PS: Corn isn't a veggie, it's a grain--seriously

Oddly enough, I also have somne asparagus. I'm gonna lightly steam mine for dinner, then toss with some pasta, olive oil, a little lemon juice, red peppers and have some freshly grated parmesan.

I know what you mean about getting stuck in ruts...
When all else fails, I either eat my veggies raw with some hummus or tzatziki dip, or in a salad, or lightly steamed. I tend to like to keep things simple.
I also like to bulk up my meals with lots of spinach and mushrooms. Nothing like filling up on low calorie, nutrient dense foods!

I'm new to the team and as I posted before, struggling with the shopping/planning/preparing. Eating in the old way seemed to take much less work.

We do like some things especially. We always seem to have spinach. Cucumbers are also a staple. DH and I like beets. Carrots are here but don't seem to be getting eaten very quickly. We all like broccoli.

I'm working on branching us out to include more things, but very much fruit ups my blood sugar more than I can handle.

Right now there's asparagus in the fridge.

I think I need to spend more time browsing because we seem stuck in ruts.

Ugh, I would be SICK if I ate that much fruits and veggies. I'm happy to be back to getting in 3 a day now. Crohn's is a PITA!

LOL, you did way better than me! My daughter had oral surgery and had to go have her brackets removed before. I had a coney dog for lunch at mom's and then we made pizza for dinner. It was a sad, sad nutrition day for me and I feel it now.

I didn't do well with eating my fruits & veggies today... just some spinach, carrot, banana, mango and coconut water. I guess that IS five servings, but I am used to getting at LEAST 8-10.

Kumquats look like tiny oranges. You pop them in your mouth skin and all. The smallest ones are the sweetest; as they get bigger they develop big seeds which you can eat or spit out whatever. The taste is sweet/sour/bitter all together and if they are new to you you might not like them at first. Most people find them addicting; hard to eat just one! But really, the smaller, the better. They are found in the produce department.

I love melons, especially a nice fat, home grown one that's still warm from the garden. (Ok, so I don't grow them, but the farmer down the road has a great U-pick place. He plants everything I don't have room for.

As for allergies, sometimes you outgrow them, and sometimes it's a cross reaction with what you're really allergic to. For instance, I'm VERY allergic to ragweed and in Aug. and Sept. which is ragweed season here, I can't eat bananas without my lips and throat going numb, weird and itchy. Any other time of year, it's fine. I never knew why until the doc who did my daughter's food allergy testing gave me a list of foods that cross react and bananas and ragweed were one of them. As for new foods, last week Meijer had prickly pear. It was good but way too many seeds for me since I have crohn's. I can definitely see myself buying more of them and putting them thru the juicer.

A kumquat looks to me like a mini orange. You don't peel them though and they taste kind of pineapple-orange to me. They were ok but not my fave.

Well, that's great! I hate all melons, but I have never tried a kumquat.What exactly IS a kumquat? I am limited to new fruits & veggies I try, cause I won't eat it if it isn't organic...

Okay, this sounds weird but cantalope. I have eaten it before it has been years since I have bought one and brought it home. I was allergic to melons for years. Who knows why. And now I'm not.

Also, found recipes using dandelion greens and another one using kumquats. I have posted them in my blog for today. I haven't made either one yet but am thinking at least one of them will hit my table for Easter.
