I was gonna make either the lunch pail muffins or the pumpkin bread... I just had a look at the pumpkin bread recipe, and it does say 3/4 cup Power flour OR... one of the other flours; so I guess I CAN do that!
I guess I just answered my own question.
I'm a little new to using all these flours. Whole wheat is about as exotic as I've ever really gotten! LOL!
Although I did use the spelt flour for those cranberry cornmeal cookies...
Thanks!

some of the large Dillon's stores have a large assortment of different flours. I bought some bean flour and a group of others at a Dillons

Here is the ingredients in POWER FLOUR:
1/4 cup amaranth flour
1/4 cup brown rice flour
1/4 spelt flour
1/4 cup kamut flour
1/4 cup barley flour
1/4 cup whole wheat flour

Now, my question is this... has anyone actually made any power flour? I went to the grocery store. The one I go to has a really great selection of organic/natural foods. I DID get spelt, brown rice and of course whole wheat flours there. But, they did not have amaranth, kamut or barley flour. I am thinking that the local HEALTH FOOD store would MAYBE have these there, but HOW MUCH money is all this gonna cost?!!!
If I were to just blend the three flours that I DO have, do you think that the results would be comparable to that of Power Flour in baking/cooking? I guess the best way to know is to just try it...
