We always, always, always pack lunches for road trips!! We do it because we have 4 kids and eating out is not only expensive, but frustrating when you have 6 people that want 6 different things for lunch!
One cooler for beverages is a must for us. We all drink a ton of water, and it seems that they go through it even faster when it's bottled and we're on the road. We usually buy a case of water, dump a little out of each bottle, and freeze them so we have ice for the coolers - less messy than bagged ice when it melts, and doesn't waste any space in the cooler because you can drink them when they're melted!
The other cooler is usually filled with fresh fruits and prepared veggies (peeled, cut carrots, green, red, & yellow pepper strips, peeled, cut apples, Cuties - easier to peel than oranges), string cheese (or a block of cheese and a knife) and crackers, yogurt, sandwiches, beef jerky, trail mix, granola bars....the goal for us is to have something on hand if you want a snack. It's too easy to stop at a gas station and buy a bunch of candy bars and bags of chips.
Lunch is usually a sandwich, a fruit, and some chips. I might bring them a juice or soda for lunch just so they have something special for our break. Lunch is always at a roadside park where we can all get out and stretch our muscles and run around a bit.
Oh, and gum! I love chewing gum. I'm alergic to aspertame, so it's usually Chiclets, but whatever it might be, chewing gum always helps curb the need to snack while I'm riding.
