Haven't packed it yet, but I am planning on a roast beef roll up (roast beef, red pepper & cream cheese), pears and some form of veggie side dish (most likely my fall back of baby carrots and something else).

Goals & Rewards:
Reaching goal weight = new haircut
Completing C25K = new sneakers

Im having tropical fruit with raw veggies on spinach. Everything except the spinach is in the bowl. Spinach is chopped in a bag. I'll add the spinach and dressing at the last minute.

I still pack my lunch even though I'm retired. Less clean up time in the kitchen. More time for life.

Yes. I made my chicken rice bowl with apples, raisins, celery, and walnuts for dinner yesterday. I made a second bowl and froze it, and it's in the plan for tomorrow. It will defrost in time for my lunch "picnic" on the bike trail and still be a delicious cold salad.

Tomorrow is my vegetarian day ( twice a week) so it's going to be a Boca burger, mini whole wheat pita, salad of lettuce, baby spinach from my garden, cucumber, bell pepper and avocado.

Tomorrow is a snack plate. 3 ounces of sliced turkey, 1 sliced tomato, sliced cucumbers, sliced red peppers, 1/2 a sliced avocado and 1 ounce of extra sharp cheddar cheese cubes.

I work home hospice so I have no access to a microwave. Although I love sandwiches and salads and wraps, etc, now that it is getting cooler I would like to pack soup or stew or something. Does anyone know of a good lunch bag size thermos?

Yes, I'm taking my favorite salad and some nuts for lunch tomorrow. I also made an extra chicken breast so one day I'll take chicken salad wrap for lunch. Have a great week all.

Hi,
I'd love your recipe for the white bean artichoke dip. Sounds yummy!!! Can't get near that dip in the restaurants but I'd like to see a "skinny" version.

Tomorrow I'm taking a salad with lettuce, strawberries and fresh mozzella cheese. Using a light balsamic dressing. It is a wonderful little salad. Taking some fruit and nuts as well. I take my lunch to work every day. It helps save money.

Tonight i'll be packing:

A banana and cheese string for first snack of the day

Wholewheat pitta with lettuce, cucumber, fresh spinach and tomatoes with a side of fruit for lunch.

Greek yoghurt/cottage cheese mix with mango/honeydew melon topped with a little muesli for the second snack of the day

I have made it a goal to bring my lunch. Have saved a ton of money, time and really improved eating a lot healthier. I am on a college campus and quite often the salads and fruit are gone when I am able to take a break.

I'm about to head out to the grocery store, but I'm making lentil kale soup, whole wheat sourdough pretzels, and white bean artichoke dip to eat with baby carrots and celery sticks. Anybody else want to share what you're packing?
