The spinach feta quiche on the top of the recipe page today would make a good lunch to pack. See the tip about making it in muffin tins and freezing after baking.

I really try to plan ahead and have things ready. Otherwise not so healthy things get tossed in at the last minute because I am rushed.

I plan my lunches all the time. Today was a salad. Tomorrow is turkey on whole wheat, and an apple. It helps to plan ahead and make it the night before. It takes some of the stress out of life.

Great job on preplanning everyone! Something I learned from SP, if I preplan I am less likely to eat poorly.

yes, I am going to prep mine shortly, and then tomorrow I will pick up some salad. I will hardboil some eggs tonight.

It's Sunday night, and I have 4 sweet potatoes baking away in the oven. These will be my lunch this week, along with fruit, cheese, rice cakes or some veggies. Whatever I don't have with lunch will be my afternoon snack.
Anyone else prepping their lunch for the week early?
