Try Gazpacho (sp? - it's a cold veg soup you do in a blender)) and fruite (melon, berries, etc) soups. GREAT FOR LUNCHES. Keep chilled in fridge & put in thermos for lunch the next morning. Also, if you put a dollop of low-fat cool whip on the fruit soup - it's a great desert!

Also, cocktail breads (rye or pumpernickel, usually in your deli section, not bread section) with some low-fat cream cheese, slice of cucumber no top, and sprinkle with a salt & herb blend. I use Jane's Crazy Mixed Up Salt (spice section).

If you have a grill - that's what I use all summer. I just have a cheapo charcoal grill - but it keeps the heat out of the kitchen. You can grill veggies, fruit, and vegetarian burgers & dogs - not just meat.

We went out to an Italian Restaurant tonight.
I had chicken w/artichokes in a wine sauce and a cup of lentil soup and a dinner roll w/butter.
For dessert, I came home and had a dole fruit cup.

They served this w/a side of pasta w/sauce. I brought all of the pasta home and 1/2 of the chicken dish home. There's enough for at least 3 more meals.
They definately give you too much to eat when you eat out.

It is way too hot to heat my oven--I do not have a working microwave. I don't want to cook. Today I did a salad w/cool iceberg lettuce and other veggies, added can of tuna and some pineapple chunks...low fat/low sugar Newmans Own Dressing...Very good and refreshing.

I am looking for more ideas of evening meal that does not need cooking.

A small salad, Zatarain's Smothered Chicken rice mix with about 3 oz of chicken. Love the smothered chicken mix, but it does have a high level of sodium

I only cook for 1. When I buy a package of chicken I make two breasts with lemon or something more plain. I eat one for dinner and chunk up the second for chicken salad with light mayo and yougurt. I put the third in a ziploc for another night during the week (add marinade, bbq, lemon & oil). Also, I buy frozen tilapia or orange roughy and keep those in the freezer. They are individually packaged and defrost in two minutes in the sink full of hot water. Add any veggies or salad and you have a full meal.

I just read all of your entries here. You all have great ideas. I have a very hard time planning my dinner time meal. I live alone, and usually just fix whatever I have available. I need to learn how to grocery shop with planned healthy meals in mind. For some reason my mind cannot focus---
Can anyone help me make a meal plan for this week so that I can make a shopping list accordingly. Lunch is hard but dinner time is the worst for me. I want to learn to use my calendar to make my meal plan, then shop accordingly.

Ideas please.

Well tonight my husband's friends are coming over for a movie night. They requested KFC. I'm planning on having a grilled chicken breast, with the skin removed. I'm going to roast up some green beans and have a spoonful of the mashed potatoes. I get anxious when it coming to eating food prepared outside of the home. But I have to be flexible.

I need to focus on one day at a time. Staying present and being grateful for the amazing life I have.

I broiled a 6oz piece of salmon seasoned with Ms. Dash, balsamic vinegar, olive oil and light adobo and steamed some broccoli with a melted laughing cow cheese wedge and sugar free strawberry applesauce.

.... and I've drank 88oz's of water today! emoticon

It's a school day so these days tend to be a little different...

I plan to eat some leftovers: A mix of - 1/2 Stuffed Pepper w/ Turkey, 1/2 cup rice, ear of corn and spag. sauce....

Worse case senario, I got to mc donalds and get a fruit yogurt parfait to shut my tummy up in class LOL

For 6/14 dinner I will make baked chicken breast, mac and cheese made with low fat cheese and 2% milk, collard greens with smoked turkey meat for the seasoning. Oh and a sparkling green tea by Lipton.

Hi I didnt make dinner but went out to bakers square I order a salad with cheese on side and then order the stir fry pita without cheese and extra veggies. I found it 660 calories but taking the cheese out had to be at least 100 less maybe more for how much cheese that was on the salad of my sons. I made a great choice and I wasnt overstuffed or understuffed. It felt good.

I had some Mahi Mahi last night... I scored it and brushed w/ and olive oil-lemon juice-rosemary- dill- salt & pepper mixture and put them on the foreman grill at 400 degrees for a few minutes... YUMM YUMMM

Tonight I have to eat light, as I used up 900 calories for the breakfast meeting and the brunch meeting I had today. But I was good, and I skipped the dessert table all together. I will probably have cottage cheese and fruit.

Today I had some left over pasta in the frige, so I added some cherry tomatoes and some fat free italian dressing and made a pasta salad.
For dessert I had some blueberries w/redi whip

OK here I go cookout was delicious, hubby did the grill cooking, YEAH!!!
I had a turkey Burger with onion, tomato, lettuce, some mustard and ketchup on a bun, baked beans, pasta salad(whole wheat pasta, steamed veggies,yellow squash, zucchini, carrots, and broccoli, fresh tomatoes, some parsley flakes and oregano)
I snacked on a hot dog plain waiting for dinner.

I will do what I can with what I have for Jesus sake Today.

Jodi - It was huge to sell 20 years of life and move here with 2 suitcases & a box (no job, no car & a place to stay for 2 weeks).

Days like today make the first two really hard years worth it! So clear I thought I could see the brances of the trees way up the mountains. A few hours of work then jump in the ocean for a swim and lounge on the beach.

yup, there are bad days....but it's still paradise.

I still havent had dinner...argh!

Ok, now I want to be in the tropics, by some water eating grilled something or other! Tonight's meal was whole wheat pasta, pesto and sauted shrimp with a wee bit of parmesean.

I'm not such a big dessert person either ... I love wine!

I live in the tropics and it sounds like you might be in luck! We grill alot, so I'm adding up tropics, pool, outside and coming with grilled stuff. Maybe even a fruit salad.

I'm a lucky woman and don't crave sweets much, but when I'm out and see one that looks really good I allow myself 1-2 bites and savor those bites and that usually takes care of it.

As I too love desserts, I will slice a smaller piece if cake and then cut it up in tiny bit size and slowly enjoy my self.

Here we go. Here is one for the hardest meal time for me. Tonight I am attending a Pool party/sit down dinner for work. I have been super good today, so I am wacthing the food intake. I am working out before dinner and the theme is tropical for the dinner. Since it is outside I am hoping for light food. Wish me luck.
