Eaten any good summer fare lately? emoticon I was thinking today about how I would think that corn on the cob would be very high in calories and starch, but a medium ear is only 77 calories, according to SP nutrition, and that includes 3 g of protein and 3 of fiber! Not bad!

I still can't get over how well watermelon goes with feta and basil.

I made something very much like your Bean & Corn Salad for a potluck last weekend. I've made it before for parties and family.

I used cilantro instead of parsley, lime juice instead of balsamic vinegar, avocado, more cumin, and dried chilies instead of hot sauce.

Always a big hit and almost a meal in itself.

My salad with watermelon, feta, basil and lime juice (a few posts below) was such a revelation to myself... and I saw Alton Brown make on on TV but he grilled slabs of watermelon, used full-fat feta, added oil, olives, and fried shallots.

I tried your recipe collection link, Joanna, and it worked great. I only looked at the bean and corn salad because that's one dish that I'd love to make with finding the ingredients that I know will be good, and that fit the bill! I'll have to try that. I'll look at your others too. Thank you!

We made a salad that was so good and so healthy:

cubed watemelon
fat free feta cheese
slivered fresh basil leaves, "chiffonade" the French call it... stacked, rolled and cross-cut
dressed with just lime juice

...and voila!

Good idea. I love sesame seeds. Sometimes we put cut-up apples into our slaws. The Asian Sesame dressing is a favorite, but we'll use any kind... vinaigrette, caesar, raspberry. All good.

I made something super fast and easy (no cooking except for toast): Tuna Bruschetta. I got the idea for from an Italian restaurant in Dublin, Ireland where I had this appetizer as my dinner....
• toast or grill some nice bread, I like ciabatta or sourdough
• top with 1/2 -- 1 tomato, chopped
• top that with a can or pouch of tuna
• a few capers (optional)
• drizzle with 1 tsp. of EVOO
If you want to do more, add onion, garlic, parsley basil, coarse salt, squeeze of lemon, whatever you like.

Hi,

I love wild rice. I had a gallon jug of wild rice I got from a restaurant supply store three years ago. We ate it all! I made all sorts of recipe's with it, especially vegetable wild rice ones. I have a rice cooker. I use that for all my rice. It just takes longer to cook the wild rice, then I add the vegetables at the end. I use olive oil and garlic as a spice, but you can flavor it with anything really. I guess it's time for me to get more. I miss my wild rice. And it's better for you, too. It's not so starchy.

The Asian Shrimp Salad sounds good! I've never heard of the salsa chicken, so thanks for that idea.

We like to make an Asian Slaw, especially in warm weather. Super easy... just shred about 1/4 of a cabbage (my favorite is savoy) and dress with a light asian sesame dressing.

That sounds good Janis. I was going to make wild rice last night just for me since I was abandoned by daughter and husband as they went out for dinner and didn't invite me.. Maybe instead I will make your recipe for tonight's dinner.
I made Spark's famous Salsa Chicken the other night. My husband refused to eat it....and then realized that when I made itlast time he did like it....so he had leftovers the next night.
I like to add black beans to the Salsa Chicken also.

I made a delicious Asian Shrimp Salad which I got on the food tracker menu. I used an Asian salad dressing/marinade in it and it was SOOO good. Even MIKEY liked it and HE hates EVERYTHING. haha

What are you enjoying eating lately?

I've been making a real EASY GAZPACHO by blending chunks of cucumber, with the skin, with low sodium V-8 juice and hot sauce, such as siracha. A couple of extra servings of vegs.

Went out for lunch and had a WILD RICE SALAD... cooked wild rice (which is actually a grass seed, not rice, and lower calorie, lower glycemic than rice), cold, mixed with chopped bell pepper, carrots, some raisins and sliced almonds, parsley, lightly dressed. I would use maybe a vinaigrette with orange juice. I've only served wild rice hot, but it was very nice as a cold salad so I will definitely try to make it. It was served over lettuce (actually mesclun or baby field greens.)

That stinks. The links work for me. Maybe because I'm logged as me.

Did you try copying the text of the link and pasting it into the address space at the top of a browser window?

If that doesn't work, then it's almost impossible to find someone's "public" recipe collection. As I said there are over 133,000 of them, and you can only skip ahead by one or two pages. The first many pages of results start with quotes or punctuation marks.

Anyway, you can make your own collections of Spark Recipes that look good.

I found that you can't search only browse, either alphabetically or from the most recent, over over 133,000 collections! So all I can figure is that I can give you the links to them.
