I line the cookie sheet with foil if I'm baking something other than cookies. Depending on how hot the oven is for the recipe, the parchment paper can scorch.

I usually cook chicken pieces at 400 and that will make the parchment paper scorch, or burn if it's in the oven long enough. So, foil is safer.

This will help you resist any Chik-Fil-A, KFC or other junky chicken tenders.

You'll Need:

2-3 Large Chicken Breast
1 Egg
1 Cup of Almond Meal
Salt, Pepper and any other Seasonings. I used cumin, season all, and a little Cayenne Pepper
Cookie Sheet (either place foil on it or grease it very well)
Turn Oven on High Broil

Beat the Egg. Mix the Almond Meal and Seasonings in a Big Ziplock bag. Cut the chicken into tender-sized pieces.

Dip the chicken in the egg. Take several pieces of dipped chicken and place them in the bag. Shake well. Lay on cookie sheet. Place in oven for 8 minutes. Turn and broil for another 4.

Repeat until you've cooked all the pieces.

I didn't use foil but wished I had. You can try to get away with just greasing your cookie sheet. That approach didn't work as well for me, but I may have not used enough oil. I ended up laboring over the sink a good while to clean the cookie sheet.
