This will help you resist any Chik-Fil-A, KFC or other junky chicken tenders.
2-3 Large Chicken Breast
1 Cup of Almond Meal
Salt, Pepper and any other Seasonings. I used cumin, season all, and a little Cayenne Pepper
Cookie Sheet (either place foil on it or grease it very well)
Turn Oven on High Broil
Beat the Egg. Mix the Almond Meal and Seasonings in a Big Ziplock bag. Cut the chicken into tender-sized pieces.
Dip the chicken in the egg. Take several pieces of dipped chicken and place them in the bag. Shake well. Lay on cookie sheet. Place in oven for 8 minutes. Turn and broil for another 4.
Repeat until you've cooked all the pieces.
I didn't use foil but wished I had. You can try to get away with just greasing your cookie sheet. That approach didn't work as well for me, but I may have not used enough oil. I ended up laboring over the sink a good while to clean the cookie sheet.
