This is something I'm going to try, sounds really good.

What a great idea! That would be a yummy snack or lunch. You could really do some variation with added cubed chicken, chile peppers, etc..... Thanks for sharing!
1 Bell Pepper
3 Pieces of Bacon (I prefer Nitrate free)
Shredded cheese, the amount and flavor is up to you
Wash the bell pepper and cut into 4 strips
Bake at 350 about 15-to-20 minutes in the oven or toaster oven
While the peppers are cooking, cook your bacon
when the peppers are done, take them out and blot off any excess water
Top with cut up bacon and cheese, put back in oven until cheese is melted
Top with sour cream if you would like
