I work until 7 every night and just recently realized the value of a slow cooker. Since we have been watching our carbs, I find that casseroles usually involve pototoes, pasta or rice so the slow cooker allows us to make protein enriched meals with different cuts of meat. We can also spread the expense of meat a little more economically by buying cheaper cuts of meat, removing the skin or fat and the slow cooker tenderizes them so nicely and we find we can expand the number of meals that one batch creates. Not to mention the wonderful aromas the greet us as we walk in the door after a long day at work....
