I wonder if it would work with yellow squash. I have tons of it.

Oh wow...sounds delish!!!!! Why didn't I think of that! I love potatoes so it's hard to cut them out of my diet but substituting zuccini and cauliflower for potatoes works well in many recipes. We have quite a few in our garden right now so I'll be making these this weekend! Thank you for sharing!

I made this! But one egg, was too much egg for one large zucchini. I'll make it again using two large zucchinis!

Good tip! thx.

I made an incredible italian meatloaf once with turkey breast. To keep it from drying out I shredded zucchini, squash, and I can't remember what else in it, but it turned out awesome.

Think I will go back to my lab and figure it out again!!

One of the keys to making them come out really tasty is to not be afraid of butter! They need to be fried in the butter so they're a little crispy and have extra flavor. Some people have made recipes similar to this but have cut out the frying and just used veg spray and a teflon pan~~~they just don't really come out very good that way in my opinion. Just a little tip.

I tried making vegetable hash browns once. I think I used yellow squash and zucchini. They were ok.

I'm going to give your recipe a try.

No, I didn't peel them. And for this recipe I used 4 small, thin ones and had plenty.

I wanted to try this recipe and drove 30 miles to shop and the store didnt have a zuccini one....grrr. Did you peel them before you shredded them?

I forgot to say that these are SO good in so many places, so they really come in handy. They go great as a hash brown replacement in the morning, but they go really well with any brunch, lunch, or next to your meat and salad at dinner. I like to make them for dinner and save a few for breakfast the next morning and put a fried egg on top of a couple of them.

I hope you do get to try them and find them as delicious and useful as I do!

Zucchini Hash Browns

1-1/2 pound zucchini
½ tsp.salt
2 eggs
6T. grated Parmesan cheese
1 clove garlic, minced or pressed
¼ cup butter
tomato wedges (optional)

Directions:

1. Coarsely shred zucchini (you should have about 4 cups) and combine with
salt in a medium-size bowl. Let stand for 15 minutes. Squeeze with
your hands to press out moisture.

2. Stir in beaten eggs, cheese and garlic.


3. Melt 2 Tbs of the butter in a wide frying pan over medium-high heat.
Mound about 2 heaping tablespoons of the zucchini mixture in pan; flatten
slightly with spatula to make a patty. Fry 4 patties at a time, being careful not to crowd them. Cook patties, turning once, until golden on both sides
(about 6 minutes).

4. Lift out and arrange on a warm platter; keep warm.

If making 8 servings, each patty has 105 cal, 3g carbs net, 8g fat, 4g protein
