Last night I was really wanting a snack. Will power was low and I remembered these cheese crisps. For a extra zing I put thin slices of Jalapeños on the cheese before I cooked them. Even my husband loved them.

OMG!!!!! I love this recipe. I gave up Cheez Its when I started the low carb diet and now I can have my Cheez Its and eat them too!! LOL

I used shredded Italian Cheese. About a tbls for each snack. It didnt' take long in the microwave. They turned golden brown quick and cooled very quickly. I was shocked how easy they come off the paper and how GREAT they taste. I really feel like I just ate cheese crackers.

I also use the Deluxe Cheese Slices. I cut them into 16 pieces, put them on a microwave safe plate that I sprayed pam on and nuke them on HIGH for 65 seconds. Did this last night and it jut hit the spot! emoticon

I use hot pepper cheese and put them in the oven and they are fantastic! Especially with my chili recipe. It is almost like having a cracker with it! :)

I usually make these with shredded parmesan, but I really like the idea of cutting processed cheese into quarters! I will have to try.

BTW, I like my cheese crisps best when I grind fresh pepper over them just before I pop them into the oven.

Yeah, we just happened to have a convection microwave at work. We have a normal one too but it was in use. I have learned my lesson. :)

Aha, but it WOULD work in a fry pan. I used to make 'fried cheese' for my kids as a treat when they were little. You just put a couple of pieces of cheese in a teflon pan and cook until they hold their shape. You can either turn them over and finish them or leave them a tad soft in the center. Good Stuff!

We do this with shredded cheeses. about a quarter cup on a paper plate spread out, then nuke til crisp. delicious!

You can also do this with processed cheese slices. Cut into quarters...they taste just like Cheezits.

Great recipe! You can do this with any cheese, too, for different flavors. I use the Fat Free cheese sometimes because I'm watching my calories in addition to carbs.

My nutritionist passed on this recipe to help her patients enjoy something snacky (like chips) but that are low carb, low fat, and high in protein.

Ingredients:
1 light string cheese stick

Tools:
parchment paper and a microwave

Instructions:

Break string cheese in half, then break each half in half so you have 4 somewhat even pieces.

Place parchment paper in the microwave then place cheese on paper leaving room for cheese to melt.

Nuke on high until golden brown. This time REALLY varries from microwave to microwave. I put mine on for 2 minutes and watch it very closely. You'll see the cheese melt, then puff up a little, then turn golden. You want it to be evenly browned so it's cripsy, but these can burn very fast. You can also nuke for 30 seconds then in 10 second increments until cripy. Just watch them very closely.

I love these because they are salty and cheesy.
