seems a mocktail is a mock cocktail....a fancy juice drink. Some of the recipes look interesting. This one has tea.

This mocktail recipe is courtesy of Rouge Tomate Restaurant.
AMBER PALMER MOCKTAIL
Ingrediants:
Pinch of mint
1 oz agave syrup
2 oz rosemary grapefruit juice
2 oz jasmine/green tea
2 oz black tea
2 oz seltzer

Rosemary grapefruit juice: (1 stalk of rosemary, pull leaves from stalk and 32 oz grapefruit juice; puree together and strain)

Directions
Add all ingredients (except seltzer) over ice into mixing glass. Shake vigorously and pour into tea glass with the seltzer. Garnish with mint sprig and grapefruit wedge.

Benefits of green tea. I accept the benefits of green tea and really believe it has helped my omentum reduce. But sometimes, I don't want it. If I put the green tea in with regular tea, will I get the same benefit?

Orange Cinnamon Tea Blend

1/4 pound Ceylon tea

4 tablespoons diced dried orange rind

1 tablespoon ground cinnamon

Mix all ingredients together. Put in your tin or jar and label with instructions if giving as a gift.

Use 1 teaspoon per cup of boiling water and steep 4 to 5 minutes. Garnish with orange peel. Delightfully fresh and spicey tea.

Well, just like those other teas, white tea come from the Camellia sinensis plant. But the leaves are picked and harvested before the leaves open fully, when the buds are still covered by fine white hair. Hence the name. White tea is scarcer than the other traditional teas, and quite a bit more expensive.

White tea is similar to green tea, in that it's undergone very little processing and no fermentation. But there is a noticeable difference in taste. Most green teas have a distinctive 'grassy' taste to them, but white tea does not. The flavor is described as light, and sweet. You should steep white tea in water that is below the boiling point. The UtiliTEA Variable Temperature Tea Kettle is perfect for use with white tea.

If you are drinking tea for your health, you may want to consider white teas. There is also considerably less caffeine in white tea than the other varieties (15mg per serving, compared to 40mg for black tea, and 20mg for green). Some studies have also shown that white tea contains more active cancer-fighting antioxidants than green tea.

As with all teas, there are many varieties of white tea, with poetic names such as: white peony, golden moon, silver needle and white cloud. White teas are produced mostly in China and Japan, but the Darjeeling region of India also produces some fine white teas.

Pour Honey, lemon juice, and spices into a glass. Top with hot brewed tea. Stir. Garnish with a lemon wedge or cinnamon stick.

A tea for people like me, who technically shouldn't be drinking alcohol. I find that if I'm not careful, this will put me to sleep. I use orange juice instead of lemon juice, as lemon juice dries out the throat.

If you use this, tell me what combinations you use - I've yet to find the 'right' spice-juice-honey-tea ratio!

MULLED PINEAPPLE TEA

Almost like a mulled cider, but with pineapple juice and hot tea. Not all tropical-tasting drinks are cold and summery.
Ingredients:

* 2 cups water
* 2 cups pineapple juice
* 2 tea bags
* 1 tsp whole cloves
* 2 sticks cinnamon
* 1 lemon, sliced

Preparation:
Heat water and pineapple juice in a saucepan, until boiling. Add cloves, cinnamon, lemon slices and tea bags. Simmer for 10 minutes. Strain out spices and tea bags. Serve hot.
Serves 4

* 5 cups water
* 3 tea bags, black
* 1/2 cup orange marmalade
* 2 tbs sugar
* 2 tbs lemon juice

* 1/4 tsp vanilla extract
* 4 cups water

Preparation:

Orange Ginger Tea
2 TBS Ginger - cubed
1/4 cup Orange Juice (approximately half of an orange)
Boiling Water.

In a mug, place the cubed ginger, orange juice, and boiling water. Let it sit for about 15 minutes.

Another one I found was in a magazine that I subscribed to. It's from Shojo Beat!, the December 2007 issue.

Shoga-Yu
"The Japanese believe ginger - which warms the body and reduces fever - helps remedy the early stages of a cold. This traditional, aromatic libation benefits from the addition of lemon, a medicinal treatment that dates back to ancient Rome and helps boost the immune system."

1 cup boiling water
3 thin slices fresh ginger
Juice of 1/4 lemon, strained
1 teaspoon honey

"Bring one cup of water to a boil. Meanwhile, peel and slice ginger and place in a mug. Pour heated water over ginger and allow to steep for three minutes. When beverage reaches a drinkable temperature, stir in lemon juice and honey. Serve with a lemon wedge."

If your having issues with your throat, I highly suggest avoiding lemon juice and the lemon fruit. The lemon will dry out your throat and do more harm then good. Other citrus juices and fruits are better to consume when you're having throat problems.

This would be nice with a cup of tea:

ALMOND (or PECAN) BALLS
1 cup butter
1/2 cup of icing sugar (I subbed Splenda)
2 1/4 all purpose flour
1 cup slivered almonds
2 tsp. vanilla flavouring
more icing sugar for "dusting" tops

Combine first 5 ingredients in bowl. Mix first with spoon then by hand to work it until it holds together. Shape into 1 inch balls.
Arrange on ungreased baking sheet. (or parchment paper). Bake at 325F for 20-25 minutes.
As soon as cookies have cooled enough to handle, roll them in icing sugar.
I got 3 dozen.

Add a little kick to your iced tea.

2 cups vodka (a premium vodka such as Skyy Vodka)

6 tsp. loose black tea (fruit flavoured is traditional)

Preparation: Mix vodka and tea leaves in a glass jar or bottle with lid. Shake to combine. Place in a cool, dark place for 24 hours. Strain out tea leaves by pouring through a strainer into a second jar. Store in the freezer and serve ice cold.

How to Make Moraccan Mint Tea

Tea is cleaned with boiling water before being dried. This removes dust from shipping and supposedly makes the tea less bitter. Tea and boiling water are combined, and may be boiled further for several minutes. After that, sugar and mint are added and mixed into a teapot with a long, curved spout. The sugar may also be combined with the tea and water in the first infusion, rather than with the mint after brewing. Using a traditional curved spout allows the tea to be poured into tiny glasses from a height of approximately half a meter to form a foamy head. It is then returned once or twice to the teapot for a good mix.

Catnip Chamomile Tea

Catnip isn't only for cats, you know. This herbal blend of catnip, chamomile, lemon balm and more will soothe you even after the toughest day at work.
Ingredients:

* 1/2 cup dried catnip
* 3/4 cup dried chamomile
* 1 cup dried lemon balm
* 1/4 cup dried mint
* 1/4 cup dried lemongrass

Preparation:
Mix the herbs thoroughly, and store in an air tight container. For a cup of tea, use 2 tsp in a cup of boiling water. Steep for 5 minutes and strain out the herbs.

Anise Tea

No actual tea in this, just anise, which gives it a distinctive licorice flavour. If you enjoy strongly flavoured herbal teas, then you should try this anise tea recipe.

Ingredients:

* 1 cup water, boiling
* 1 tsp dried anise leaves
* 1 tsp honey

Preparation:
Steep anise leaves in hot water for about 5-6 minutes. Strain out leaves and sweeten tea with honey.

I have been using Almond milk for tea lattes. After finding a packet of "Green Tea Latte" by Damizle in a Korean store last week... I loved it then couldn't find it anywhere.

So I used unsweetened almond milk and brewed green tea double strength, added a tiny bit of sf vanilla (could have used a sweetened vanilla almond milk... maybe next time) -- anyway, it turned out to be as nice as the packet, just not as easy to carry around in my pocket. :D

Maybe I'll just brew the green tea (or other flavors) in almond milk next time. I think adding a little matcha would be good, but will have to order that. Any recommendations for a good quality matcha tea?

Ugandan Ginger Tea Recipe

1 cup milk
1/2 - 1 tsp loose black tea leaves
1 tbsp sugar
ginger

Set the milk, tea and sugar to boil. Wash a thumb-sized piece of fresh ginger. Pound until flat, where juice should begin to ooze. Add the ginger to the milk-tea mixture when it begins to boil. Reduce the heat, letting it all simmer for 2-3 minutes.

1 cup strong black tea
1 shot Bundaberg® dark rum

Artillery Punch Recipe

1 qt strong black tea
1 qt rye whiskey
1 bottle red wine
1 pint Jamaican dark rum
1/2 pint brandy
1 jigger benedictine herbal liqueur
1 pint orange juice
1/2 pint lemon juice

Combine all the ingredients in a large punch bowl with a block of ice. If found too dry, sugar syrup may be added. Decorate with twists of lemon peel.

Chai Tea Blend

1/2 cup black tea leaves

3 crushed cinnamon sticks

12 crushed black peppercorns

5 crushed cloves

6 crushed cardamom seeds

1 teaspoon crushed cumin seeds

4 whole crushed allspice

1/8 teaspoon ground nutmeg

To make heat milk and water together in equal proportions and add 1 tablespoon per cup of mixture, let stand for 10 minutes strain and serve.

Rose Hip and Lemon Tea Blend

1/2 cup dried rosehips

3 teaspoons dried lemon peel

This tea is naturally rich in vitamin C. In a bowl crush seeds and pulp of dried rose hips and add the dried lemon peel. Mix together well.

Place blended tea into your container and label with instructions if giving as a gift. Use 1 teaspoon per cup of boiling water and allow to infuse about 8 minutes. Sweeten with honey, if desired, or add a thin slice of lemon.

Orange Cinnamon Tea Blend

1/4 pound Ceylon tea

4 tablespoons diced dried orange rind

1 tablespoon ground cinnamon

Mix all ingredients together. Put in your tin or jar and label with instructions if giving as a gift.

Use 1 teaspoon per cup of boiling water and steep 4 to 5 minutes. Garnish with orange peel. Delightfully fresh and spicey tea.

Lavender Herb Tea


Ingredients

* 1 teaspoon dried lavender flowers
* 1 teaspoon dried chamomile
* 1 teaspoon green tea leaves (or 1 tea bag,I use decaf)
* 4 cups boiling water

Directions

Here are a few of the more popular herbs used for teas, and
tips on how to turn them into a delicious drink:

Mint is a popular flavor for tea drinkers. There are many varieties of mint, including spearmint, peppermint, orange mint, and more. Experiment with all of them to find your favorite flavor. To make the tea, use whole mint leaves, slightly crushed (use method listed).

Chamomile is another tasty herb for making tea. But this tea requires the flowers only, not the leaves of the plant. Steep for not more than 3 to 4 minutes, using 1 teaspoon of dried flowers, or 3 teaspoons of fresh, to a
6-oz. or 8-oz. cup of boiling water.

Bergamot herbs make a sweet, citrus-flavored tea. It is best made by using 1 teaspoon of dried flowers per cupful, and simmering gently for 5 or 6 minutes.

Lavender is not only a popular aromatherapy herb, but also a flavorful herb for tea. Use the flowers and steep according to the general method listed.

Lemon verbena is a tea for the lemon lover. For best results, use fresh leaves, about 1 tablespoon per 6-oz. or 8-oz. cup of boiling water. Steep for at least 5 minutes.

And for those who enjoy soft drinks better...try this Ginger Ale Spritzer.

You’ll need: 2 sprigs of crushed mint, a pint of ginger ale, pitcher, ice, and one lemon. Place the crushed mint in a pitcher filled with ice. Then add the juice from half of a lemon. Pour a pint of ginger ale into the pitcher, slice up remaining lemon, and add to the drink. Stir and serve immediately.

HOT TEA PUNCH

Ingredients:

* 5 bags of your favorite tea
* 6 cups water
* 3/4 cup sugar
* 2 cinnamon sticks
* 8 whole cloves
* 1 1/2 cups orange juice
* 1/3 cup fresh lemon juice

Method:

Bring first 4 ingredients to boil in heavy large saucepan over high heat, stirring until sugar dissolves. Boil 6 minutes. Remove from heat. Add tea bags. Cover and let steep 10 minutes. Discard tea bags. Add orange and lemon juices to punch. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm before continuing.) Using slotted spoon, remove whole spices. Serve hot.

I tried those Mo-Tea-Tos....my oh my--they are good! I went a little light on the rum (figuring it would be less calories) and used dark rum, as that's all we usually have around--still very tasty! It was hard not to have the whole little carafe of it I made!

Basil Mo-Tea-Tos

1 large lime, quartered
6 large fresh basil leaves
1/4 cup sugar
1 bottle (16 oz.) Lipton® Pure Leaf™ Green Tea with Honey
1 cup light rum
1 cup chilled seltzer

In glass pitcher, squeeze lime, then basil and sugar. With wooden spoon, thoroughly crush against side of pitcher; add lime rinds. Stir in Lipton Pure Leaf™ Green Tea with Honey and rum. Just before serving, add seltzer and pour into ice-filled glasses. Garnish, if desired, with additional basil leaves.

Serves 4

Green Apple Sparkler

* 4 Stash Moroccan Mint Green tea bags
* 1 1/3 cups boiling water
* 2 cups apple juice
* 1 cup sparkling water
* Ice cubes

Directions:

Steep Stash Moroccan Mint Green tea bags in boiling water for 3 to 5 minutes. Gently squeeze tea bags and remove. Add apple juice and sparkling water. Pour over ice. Serves 4.

Ginger Tea

Ingredients:
1/2 cup thinly sliced fresh ginger
6 cups water
2 tablespoons honey or brown sugar
Lemon wedges for garnish if desired

In a saucepan simmer ginger and water 20 minutes, or more for stronger tea.

Add honey or sugar and strain tea through a sieve that is set over a teapot.

Serve tea garnished with lemon wedges.

Recipe makes about 4 cups of Ginger Tea.

Here is my friend Sarah's favorite Sweet Tea recipe, straight from North Carolina!

6 tea bags
2 cups cold fresh water
1 cup white sugar

Bring water to a boil on the stove. When it boils, add the sugar and dissolve it. Remove from heat. Add the tea bags.

Cover and let steep 10-20 minutes, according to your liking. Serve over lots of ice.

It should keep 2-3 days in the fridge.

This is for when you want a special treat. Not really low-cal, but tasty!

Thai Iced Tea

6 cups water
8 tea bags, black
1 cup evaporated milk
4 Tbsp sugar (I have used Splenda and it's still OK!)
4 tsp cinnamon
4 tsp cardamom
crushed ice

Boil the water and steep tea and cardamom for 5 minutes. Strain out tea bags and let cool. Put ice into 4 glasses and add tea. Leave about a quarter of each glass empty so you can add 1/4 cup milk and 1 tsp of cinnamon each.
