My daughter was vegetarian throughout her teenage years (from age 11). Her iron levels when she was about 16 or 17 were impressive. She didn't have any problem getting enough iron even though we didn't stress about it. She relied on cheese a little too much for protein, in fact. Her diet comprised a lot of potatoes too.
Speaking of potatoes, I just looked it up, and they're higher in iron than spinach. Sweet potatoes are good too.
She liked black bean and corn salad, and spaghetti sauce with lentils in place of meat. Apparently that was enough to keep her iron up. I put sunflower seeds, nuts in her muffins, etc, but nothing that was a lot of effort.
Sesame seeds are high in iron, so hummus would be good.
