Hi everyone,

I am on day 5 of the 21 day kickstart vegan plan from Dr. Barnard. It is going well, but eating hummus and beans on the same day, well lets just say...it wasn't good.

My favorite so far: bok choy, onions, mushroom an red pepper. cook everything and then mixed them together and did stir fry. Very tasty and then right before I ate it, sprinkled my flax seed meal on it.

Breakfast is easy: steel cut oatmeal or vegan protein powder which I purchase on line and really like the vanilla.

In April I have a weekend with "Forks over Knives" which should be great but then a week later I will be on a symposium in San Franciso for 1 week, which really will be a challenge.

As for going out to friends places...How about offering to bring a vegan cake? Or if you're going to dinner...offer to bring a great vegan main dish! Turn everything into showing people that being vegan is not only good for animals, but delicious too!

My office is big on cakes and cookies...so I now make all the cakes, and make them all vegan. People are surprised that vegan can taste so good!

Well, I'm on day 7 and it is going really well. I'm glad I am doing this!

Amanda, I hear you. I know it will get tougher as I'm going to people's houses and stuff like that. Eating is such a social event. Actually, yesterday I bumped into a friend. I'm going to her daughter's first birthday party this weekend. I told her about the challenge and she said "Oh, no! You won't get to have birthday cake!" So, yeah.

I will keep you all posted! I should write a blog...

Keep us posted! I've been vegetarian for a year and try to make vegan choices whenever possible! I think the toughest part would be when I go out of town for a weekend to visit friends or my inlaws and I can't eat what they eat. It's been a challenge just with being vegetarian.

Vegucated is on my list of things to watch (when I get some time)! If it's as inspiring as Forks over Knives, I really want to dedicate some time to watch this with my full attention!

I've been at it for a few of weeks now. Once I figured out how to replace certain things, it worked well. Some things I've learned is: Coconut milk in coffee is awesome, soy milk gross. Almond milk awesome in cereal. Chia seeds go goopy when added to smoothies. Vegan protein powder is gross. Vega chocolate smoothie mix is good. Soy and coconut yogurts are both gross...Soy is worse. Almond milk chocolate ice cream is awesome! The rice one is not as good as the almond one. Non dairy chocolate tastes like butt. However, if you get Vega Saviseeds covered in non dairy cocoa...it hit's the spot. Play with spices, they make bland into wow! Starbucks only has soy milk (blech), but Blenz has Almond Milk for lattes. Yaaa! Soy cheese is as good as it looks... like a block of rubber.

I'm learning every day, and loving it!

Just finished cooking for the week.
Turns out the prepared food is vegan.
It looks like I am almost there.

It's interesting to hear where everyone is at on this.

I'm almost done with Day 1 and it was fine. I tracked my food in SP for the first time in ages. I definitely ate healthier than I have been. I really want to stick with it for the 30 days and see how it goes.

I like that it is just 30 days. That way, it's not like OMG I might never eat cheese AGAIN! But rather, "Ok, I can do this for 30 days. Then, we can reassess."

I will keep you all posted for sure, and please do the same. :)

Please do share how it goes! I'm going to check out her book (30 Day Vegan Challenge) from the library soon -- just have to finish what I already have out first! I've been listening to her podcast, Vegetarian Food for Thought, and it's very interesting and insightful.

Thanks for sharing this. I have been reading Dr. Dean Ornish's books. I want to move in the direction of being a vegan, I have tried it, but didn't stick to it after about a month or two. Within that short period of time I felt like I needed meat or dairy. Sounds weird, I know. But I think I am going to give it another try, since I eat mostly vegan anyway with the exception of egg whites from time to time and chicken breast.

Enjoy! It will be 4 years for me. I started with a vegan kickstart and never looked back. Learn lots of new recipes. You will have setbacks but put them behind you quickly. Tomorrow is always another day.!
