Wow! Love all the ideas. I almost never buy canned beans anymore. They cook in a snap in the pressure cooker if I forget to plan ahead. If I do plan ahead, I also enjoy using the slow-cooker, as you don't have to babysit the stove & water levels.

DS9KIE thanks so much for the link. thats really helpful. im mostly having issues with the money part because a part of me keeps thinking its expensive because when i was a teenager my mom cooked all natural organic vegetarian meals and i always went shopping with her. she spent a ton to feed our family of 4 (3 when my sister moved out) i have about 200 for food each month sometimes a little more sometimes a little less. i feed me and my boyfriend pretty healthy on that but then i look at my sister who has just her and her husband and she spends almost 1000 dollars on food in a month! she eats healthy vegetarian and everything buying meat once in a while for her husband. thats why this worries me that either A: i wont be able to afford to get everything i need to stay healthy or B: ill run through the monthly food budget too fast and end up not having any food at the end of the month.
i will defineitly be making a bunch of lentil soup tho. i know where i can get almost all of that stuff pretty cheap. i make a lot of my own stuff already. i make sourdough bread and peanut butter and all sorts of things which helps.

Don't care so much about what people think about you. They are to busy caring too much about what you think about them.

greens (collards, kale, ect), carrots, onion (its cheap cause you only need one), potatoes, dry beans(lentils are the easiest), brown rice, frozen veggies are the cheapest along with canned veggies like tomatoes, look for sales at the stores every week and the make recipes using these ingredients. Soups and stir fries are the easiest and versatile . I can make a stir fry everyday and it will be different each time.

anyone have a good lentil soup/stew recipe? i havent found one yet that i really liked. my mom had a good one but since she and i no longer talk i cant exactly get her recipe. i think it used red lentils and potatoes... im not sure what all was in it haha.
thank you for the help and support. when i next have money to spend i think im going to get a bunch of beans in bulk and soak them when i need them. also wanted to ask does anyone have any creative sneaky ways to get veggies into a very picky eater? my boyfriend grew up on the meat and potatoes diet and the most i can get him to eat is a salad with romaine lettuce and onions as long as it has cheese and a ton of ranch on it which kind of cancels out the healthy lol. hes very picky and if theres anything new he can see he wont try it. he like a 2 year old when it comes to veggies haha.

My suggestion would be to make a big pot of veggie and bean soup.Will last a few days-a week. Use whatever veggies are on sale,or on the day old cart,I find lot's of perfectly good veggies there a lot! Canned beans when they have a can can sale.And lentil soup/stew goes a long way also! Welcome Diane

Eat fruit and veg in season. Soak and cook beans from scratch. Squash is usually cheap. It's hard to find fruit/veg more expensive than meat, at least here were I shop. Stay away from premade foods. They suffer nutritionally. Our parents used to use meat sparingly because it was so expensive. Cook like they did. From scratch.

hi there. when i was 12 i became a vegetarian along with the rest of my family. i ate vegetarian for 6 years. i know how to be vegetarian i know how to be healthy and how to do it right. my issue is the money. i started eating meat again almost 3 years ago because i lived in my car and i wasnt getting the right nutrients so i was sick all the time. theres only so much you can buy and keep in a car. so anyway ive been out of my car for 2 years now and ive been living with my boyfriend who loves his meat. i found it was just cheaper to buy a bag of chicken for a week then all the things for my vegetarian meals. even tho we both eat meat about 80% of our meals are vegetarian because i will only eat chicken and once in a blue moon a hamburger.
but now im wanting to get back into being a vegetarian. i did it for moral reasons for those 6 years and i never felt right ignoring my morals. but i needed the nutrients.
so my question is what are some good ways to eat vegetarian on a budget? a really tight budget. we live off my boyfriends one paycheck so we cant afford much. i will still be eating dairy just no meat. i need good budget friendly meals. thanks.
