I do the peanut butter in oatmeal thing too! But I keep it sweet with a little added honey. Plus raisins or a chopped up apple--it's pretty much everything you need in a single bowl (whole grain, protein, and fruit)!

it was an oatmeal morning - 247 calories or so with coffee - added raisins, sunflower seed and almonds with a touch of maple syrup. it's a go to breakfast.

1 - 1/2 cup water
1 scoop RAW Protein
1 tsp spirulina
2 Tbsp fresh ground flax
1 Tbsp psyllium husk

This is vegetarian (eggs, you know) not vegan, but this morning I really enjoyed poached eggs on polenta - calories came in under 300. Would be nice with a splash of tomato sauce/spaghetti sauce on top.

Ok I put PB in my oatmeal, making it savory instead of sweet. I also will sometimes use pan spray and do potatoes, mushrooms, onions, green pepper, and do a sort of veggie scrapple.

Peanut butter on toast.

Leftovers.

1/2 a banana mashed with tofu (not too much, you want the banana to overpower the tofu), raisins, some cinnamon, warmed up in a pan or microwave.

YNIZAN3 - We should eat together! I too, love just plain ole fresh fruit. I have never been much of a breakfast person and my stomach cramps up if I eat anything too heavy, so I just eat fruit. I start with one or two pieces and shove 2 more in my pockets. Over the next hour or so I eat the other pieces.
Sundays are a different story - I eat one small piece of fruit to break the fast and tide me over while I cook up a gigantic brunch of scrambled tofu, hashbrowns with peppers and onions and root vegetables, oatmeal with nuts and dried berries, and a big steaming pot of coffee (the only day I indulge in real coffee). Mmmm... I love Sundays :)

Cool to see all the different responses! I seem to fall into a rut and eat the same or similar item every single day, with minor variations. You all may encourage me to expand my brekkie horizons. A bean & veggie wrap with salsa sounds good at the moment...

I would love to find more variety for breakfast, too. I've fallen into a routine of either cereal and almond milk for breakfast, and once or twice a week a breakfast wrap. But since I've continued to lose my taste for tofu, even the scrambled tofu wrap has now dissappeared. Someone suggested I try a sort of bean and veggie wrap for breakfast, but I've yet to get around to it. But I'll have to admit that in general a non-milk and cereal works fine for me.

Julia, this is such a good topic. I struggle with breakfast. It needs to last 4-5 hours because of the job, I don't like to start the day with sweet stuff, and processed cereals tend to cause gastrointestinal disturbances I need to avoid. I've been mostly eating steel cut oatmeal with nootch &/or some berries. But boredom's a factor. And time in the morning is always a factor. I'm going to try something different this week - rice, onions, broccoli... I'll let you know how it goes. Good topic!

Weekdays (workdays) I have oatmeal (steel cut, organic), with flax seed, nuts, fruit. cinnamon, nutmeg (both freshly ground) and organic milk. It keeps my blood sugar steady and I don't need to eat lunch until 5-6 hrs later. Milk can be soy or nut milk if you prefer. My husband eats this without any milk at all.

IF NOT NOW, THEN WHEN?

When I eat crap, I feel like crap.

I have lots of water and herb tea. I workout in the early mornings usually fasting. I have a homemade protein drink after exercising which I'm trying to taper myself off of. The days I don't go to the gym, I practice a hot power yoga and sweat buckets. I fast for this as well and I have a couple glasses of coconut water after to replenish my electrolytes. Rarely do I not have an intense workout or yoga practice in the morning. When I don't, I have collards or bok choy or something green cooked up with young ginger, garlic, chili, coconut oil, and maybe some tempeh or tofu. Or, I have a green blended 'drink' made up of things like kale, dandelion greens, parsley, ginger, spirulina, chia seeds, lemon juice, apple... Oooh, I'm so hungry right now, I think I'll have breakfast at three in the afternoon.

I like the Tropical Green Smoothie Submitted by: LILYGIRL83 that is in the SP database. I also make polenta with vegan sausage on the weekend and freeze breakfast size portions for during the week. The recipe for that one is on the Field Roast Site.

Usually consists of 3 to 4 ounces of lean protein and fresh fruit.
Coffee first then switch to brewed green tea the rest of the day.

What is your fave breakfast? I tend to rely on smoothies most days. While I love them, they are filling, and they fit my nutritional goals, I'd like some other options. So I started this thread to find out what all of you enjoy as breakfast!

Today's smoothie:

1 small apple (2 1/4" diameter)
1 T psyllium husk
1 scoop RAW Protein (Garden of Life vegan non-soy protein)
1/2 tsp spirulina
1 T cocoa powder
stevia to taste
2 cups water
2 T flax seed, fresh ground

Calories: 220
Carbs: 28 g
Fat: 6 g
Protein: 21 g
Fiber: 14 g
