This is my first full week without meat and it feels good - I don't think I'm going to miss it that much. I still have some fish in the freezer (and some canned tuna) still to use up - but otherwise I am making progress being a veggie.
I stocked up on a lot of ready made 'meat free' dishes to help with the transition, but I'm hoping to phase those out. I don't think there's any real health gain using them. I did a huge batch cooking session last weekend to have soups, stews and curries on hand - and that has helped. I'm going to add in some chilli and veggie sausage casserole too (which will obviously contain TVPs, but still it's progress).
It's been fun reading all the books and the different blogs that are available. Post Punk Kitchen (http://www.theppk.com/), http://ohsheglows.com/ and http://fatfreevegan.com/ are all looking good to me.
But really I need to get in to green smoothies to start my day, I think.
