I've just gone through this learning curve. Slowly more and more of my meat is going away and replacing it more and more this other things. In my freezer all that is left is fish - which I feel much more happy about - no more chicken, pork or beef.
The bouillon in my refrigerator is now veggie (better than bouillon - love this stuff), and I've had to activity go out and get a lot of tofu. Honestly I dislike a lot of the pre processes vegan products (amy's, boca etc) not because they are bad, but because it gets further from my one step from the sun goal. I'm still aiming for 90% being one step and 10% being two step...I probably won't be giving up whey powder because the rice protein just doesn't work as well for keeping me away from all the foods I use to have to want.
I had some workmen look in my refrigerator the other day as they were getting out some cold water and they remarked that they'd never seen a refrigerator filled with so many vegetables. They started to ask me tons of questions about what I eat - so fun talking about the joys of vegetables.
