Yeast can be an allergen, but I don't know if people who are allergic would react the same to "nooch" as they do to regular yeast. That may be what's up with people who report bloating, though. They may be allergic.

The nooch and cashew paste on nori idea sounds pretty amazing! We may have to try that at home!

I am new here but vegetarian for 40 years. I use nutritional yeast but only in carrot tuna. Thank you for this recipe as I will use it as a substitute for cheese.Never ever used it that way. Some say it bloats them. Is it true or are they confusing this with brewer's yeast. Again thanks. This is better than Fbook.

I love the taste of Nutritional Yeast. Use it on popcorn. Also, you can make a paste by soaking raw cashews for 2-3 hours, then puree them in a food processor with a generous amount of nutritional yeast and some salt. Spread a thin layer on nori sheets, then dehydrate them until they are crispy. It's like eating cheesy nachos.

I think people who don't experience a big taste difference are only having a little sprinkle or what-not. I pile it on. I am such a Nutritional Yeast fiend. I'm vegan, but I used it for years before I was vegan as well

I also pour it on popcorn. Not just sprinkle, I like every piece to have quite a bit on it. Even my non-veg friends love this popcorn. I take it to movie theaters to sprinkle on movie theater popcorn, if I'm going to indulge. Some movie theaters here in Portland actually offer it as one of the condiments.

Here's my favorite "queso" recipe (obviously many servings). I use it mostly for burritos, tacos and nachos, or mix it with fat-free refried beans as a dip, but I also have it on bread for a grilled cheese and noodles for mac and cheese.

1/4 cup Nutritional Yeast
1/4 cup Whole Wheat Flour
1 tsp Garlic Powder
1 tsp Paprika
1/2 tsp Salt
1 cup Water

(Optional, that I never add: RoTel or salsa, or a bit of margarine.)

Combine dry ingredients. Add water. Slowly simmer, whisking constantly until desired consistency.

what a great idea, to use it in pesto! we happen to have a fairly decent basil crop ourselves and I've been wondering about how to do a healthier version. does anyone have a low (not NO) oil they'd like to share?

btw, franklyamused and I are also testers for a new vegan cookbook by isa chandler moskowitz - this one is low cal! we've really enjoyed the process and find the recipes fit right in to sparks food planning. some of them became immediate favorites, and are in regular rotation.

I'm not vegan, but vegetarian, so I use it in my omelets! That & a dash of the AMAZINGLY healthful turmeric make my omelet a beautiful yellow! Especially, if you prefer egg white omelets! But, even if you are vegan & use an "egg" replacement to make omelets, still I would add it.

Mac n cheese has ALWAYS been one of my faves. One of the first things I did when I made the switch was to veganize it. Sometimes, I put "meat" in it, and sometimes not.

We've found a packaged brand of mac n cheese that we love. Can't remember the name of it right now, but it's in a little, white, paper bag, and all you do to "make" the sauce is add soy milk (or water. Bleh.)

I've been putting it on everything!! Doesn't change the taste much for me. I just recently purchased some vegan boxed mac and cheese, can't wait to try it. I will eventually try my hand at home made vegan mac and cheese.

Hello and welcome back to the world of veganism... there are MANY different recipes using nutritional yeast, and even more varieties of each recipe!

You what's interesting? I find nutritional yeast more "savoury" above any other description I can give it. I have used it as a replacement for shrimp paste in Thai Green Curry - it worked GREAT! Anywhere in a recipe where there needs to be a sharp, pungent, savoury addition - Nutritional Yeast works great.

Here is a recipe from vegweb.com which is a great beginner mac and cheese! You may want to HALF the recipe though - it makes a hell of a lot!

"BEST MAC & CHEESE RECIPE" (vegweb.com)

Ingredients:

1 1/2 cups of plain soy milk
1 cup of water
1/3 cup of tamari or soy sauce
1 1/2 cup of nutritional yeast
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon vegesal or in lack of fancy product, just use salt
1/4 of a block of firm (not silken) tofu
1 cup of canola or vegetable oil
1 1/2 lbs of pasta of your choice preferably macaroni
a relatively large baking pan (like a brownie pan)
1 dollop of mustard (optional)

Directions:

This is very simple and tastes amazing!

Pre-heat oven to 350 degrees Fahrenheit.

Boil water in a big pot for the pasta.

All of the ingredients sans pasta can easily go in a blender liquid and powdered this is by far the easiest way and the only was I do it.

Once pasta is cooked drain I and put it in the baking pan pour the cheese sauce over the pasta.

Bake until the top of the pasta looks slightly browned and crispy about 15 minutes Serve.


PS - I've made it before, it's pretty good! You can definitely cut down on the canola oil... 1/4 cup canola oil works fine.

I understand that about the way that vitamin b's are flushed out of the body. I had just forgotten that Nutritiona Yeast is so high in it. So I was wondering why I had vitamin pee late at night. A little unnerving.

It took me a while to get used to it and now I am hooked. remember that it is high in B vitamins. When I first started eating it it turned my pee neon yellow and I freaked out. That may have been too much info! :)

I tried nutritional yeast last night for the first time. I had roasted some summer veggies and tossed with whole wheat penne pasta (I know! So good!). And sprkinled with NY. It was good. I think maybe it is a slight acquired taste for me. But I'm going to keep using it.

LAEats, we have. There's a recipe for "cheezy sauce" in one of the cookbooks I have. It is excellent.

We LOOVE nooch in my house. We use it on EVERYTHING: Popcorn, salads, over pasta as a cheese substitute. It's yummy!

I just wanted to bump this to the top. I just got in to nutritional yeast. I love it on popcorn, and sprinkled on veggies but that is as far as I have gone with it. I have seen some pretty interesting "cheese" dip recipes with it. Has anyone tried anything like this?

I love Nutritional Yeast. I, too use it one popcorn with eight coconut oil ot olive oil. I've also used it in pesto and raw cheeses and salad dressings.

I suspect your boyfriend is confusing brewers yeast with nutritional yeast. The two things are different items entirely. Brewers yeast is left over from the production of beer, and is not a good source of nutrition. Nutritional yeast is specifically grown to be a nutritional item, it is a great protein boost for low protein dishes, has lots of vitamins and minerals,and is an excellent source of B12. I add it where I can (judiciously as I find excess amounts act just like cheese for me). We use it in gravies, queso, cheese sauces, on top of pasta and pizza...My wife sprinkles some on her popcorn, but that just oogies me out. Mind you, I don't much like popcorn either. emoticon

My suggestions: sprinkle it anywhere you wish to see what you like, and look for recipes that use it to try, and have fun with it!

I use it on popcorn as well but i have also used it in zucchini dishes. I have used it in cooked zucchini and raw zucchini dishes.

The Vegan with a Vengeance book uses nutritional yeast to make seitan, protein from wheat gluten flour. I like to sprinkle it on popcorn and sneak it in spaghetti sauce. I am a vegetarian who is slowly working her way back to being vegan. There are many challenges but it is worth it for your health, the environment, and the animals. I use it in my smoothies. I usually get what your BF is thinking of, which is Brewer's Yeast, but decided I'd try the nutritional yeast after hearing about it here.
BTW: I've used Brewer's Yeast for years & I don't make beer.

I use nutritional yeast on popcoron with olive oil. I put it in my spaghetti sauce, in cheese, on burrittos's, and many other things. I love it!

I have only used nutritional yeast on pasta and in a raw cheez I used to make.

Nicole, how do you sprinkle coconut oil on popcorn? I've only seen the oil in a spreadable texture.

I have never been a fan of the stuff myself, but you'll find it often in vegan cookbooks. My good friend loves it though and adds it to tons of recipes, including her homemade popcorn sprinkled with coconut oil, salt and nutritional yeast. Good luck!

Good Afternoon All I was wondering if you could help me understand Nutritional Yeast. I'm slowly transitioning Back to veganism again(did it for Lent) and recently picked up some Nutritional Yeast as I heard it can be used as cheese replacement.

My BF states that its can only be used in beer making. I find tat hard to believe that something only has one use.

I've heard people here talk about it and really just want to know how to use it and any recipes would be helpful too.
