A good replacement for tofu is seitan! There are many reasons to use seitan but the fact that you can make it at home helps tremendously! Check out this link on how to make it : http://www.associatedcontent.com/article/1

I like using tempeh when I'm sick of tofu. It has a nice texture to it. I used it in an egg screamble with veggies, or in a stirfry. I season it and bake it then use it to make a tempeh salad for sandwiches or stuffed pita pockets.
Also, there's seitan, which I'm only sort of familiar with, but it can be used in many of the same ways tofu can.

I never liked tofu, either, but girl, let me tell you; I became hooked on Whole Food's Golden Sesame Tofu (at the deli counter) and found the recipe for it...I do not like soft or silken tofu; I cook with firm or extra firm, dredge it lightly in cornstarch after pressing as much liquid from it as possible and saute it in grapeseed or olive oil...I am so not joking when I tell you it's not bad..

Seitan can be used (although, at first, I have to admit I thought it nasty with a capital N), or tempeh...I also use the Quorn products (the chicken nuggets rock) including the "beef" crumbles, which can be used in chili, etc...I also love the Morningstar Chik'n strips and beef strip (both are meat substitutes)...

Tofu is an excellent source of nutrition for you. The only people who need to watch their soybean intake are those with breast cancer as soybeans contains a natural estrogen and even then it should just be limited for them. I have cooked with tofu for all 38 years that I have been a Vegetarian. Tofu will take on the all of the flavor of what you cook it with. I have made many dishes with tofu for my meat eating friends and family and they never noticed that it was tofu.

Blended tofu is good in most recipes. But I agree the chunks aren't the best. When I'm cooking and the recipe calls for chunks of tofu I tend to add more of the other ingredients and just leave out the tofu. There usually are other ingredients when cooking with tofu.
However the local terikki place makes some tofu terikki that is out of this world. So I'd say keep your mind open too

I feel there is some confusion here, no one is denying the way that tempeh is traditionally made but since someone was making a point about gluten allergies and tempeh I think it is responsible and only fair to show that indeed there is tempeh made with grains, this is an example of just one of these and there are others if you do a search on the internet.

I have never seen tempeh made with wheat. I've made it myself with both soybeans and black-eye beans. In its home territory of Indonesia it is almost always made with soybeans, occasionally with peanuts.

Other alternatives could be chickpeas and other legumes. Also there are sometimes wheat or other grains in tempeh, depending on the way it is made. Most of the stuff in the store is made with grains of some kind, but it can be made with just soybeans it is just really bland tasting. I have read some research that eating alot of soy is not good for people either and so now I try to use some rice based things.

I just haven't cared for it when I've tried it before. Funny aftertaste, like I just ate some Crisco.

BUT, now that I think about it, I've had 'Tufutti' - my whole foods bakery makes vegan chocolate cupcakes with not-cream cheese frosting, and that is good. So perhaps I don't like chunks of tofu, but blended into recipes might be okay?

I don't understand it very well either. LOL!

I think it's a matter of learning to cook with firm and extra firm tofu. I didn't think I liked it either, but after a few tries I got the hang of it and now we eat it 2-3 times per week. If you don't want to use it at all, try portobello mushrooms or seitan.

Tempeh does not contain wheat, rye or barley. It's 100% soybeans.

Are you "afraid" of soy :-) or is it an allergy?

If you are reluctant to try it, I double-dog dare you to get yourself some silken tofu and blend it into whatever recipes it calls for.

Depending on the recipe, you could substitute non-dairy milk (soy, rice, almond) like in a smoothie.

If it's in a soup or casserole and being used as a thickener and protein source, you could probably use mashed beans as a replacement (use a potato masher or food processor). Use a mild flavor bean like cannelini or pinto.

We can't use Tempeh or Gluten cutlets because my hubby has Celiac (no wheat, rye or barley).

I just got 'Clean Diet' by Terry Walters - a lot of seasonal recipes, some look really nice.

HOWEVER, there is a bunch of tofu in this book, which I do not eat. Is there anything that can be used as a substitute? I know that is kinda backwards...LOL! (Obviously I mean the recipes where the tofu is blended, not the ones where it is in chunks like meat.)
