Fresh fennel is great in salads, it's texture is like celery. I love adding fennel seed to split pea soup.

I tried to find a vegetarian fennel cookie recipe this one is a orange fennel cookie...If you look up fennel in the search bar you ll be amazed at the different things you can do with it.

I LOVE fennel...although it always throws the cashiers at the grocery store for a loop when they have no idea what it is :)

I cook mine up really easy...I quarter it and seperate the layers, chop some onion into 1" pieces, half some mushrooms, sometimes a sweet potato or squash cubed up, whatever veggies I feel like. Toss it all with some olive oil, balsamic vinegar and garlic and roast in the oven. It's YUMMY!!! Nothing like onion, much more mild than that. And the bulb itself isn't as overwhelmingly licorice flavored as the seeds seem to me.

I highly recommend trying it.

I've only used it raw tossed with other salad greens. The combination of fennel, oranges, & red onion in a salad with a vinagrette is classic & have had it in restaurants, too. Very good! I agree with others who have posted: it is said to aid in digestion. That is why in more traditional Indian restaurants, they often have a small bowl of fennel seeds on the way out (instead of the usual mints). As for recipes, I'm sure if you did a search on sites like the Food Network or Epicurious you can find some. Good eating!

One of the best salads I have ever eaten was at Chez Panisse (upstairs, the "cheaper" part) and it had super thin slices of blood orange, fennel and red onion. It was AMAZING.

I always like fennel when I have it at a restaurant, but for some reason I don't enjoy it when I cook with it at home. I don't know if I am not good at picking it out in the store or what.

I've used the tops as a herb and the seeds as a spice but as yet I've never tried the bulb. Something new for me to have a go at.

Fennel is said to be very beneficial for the digestive system, in particular helping to reduce gas, so that's probably handy for many of us veg*ns!

Apart from the whole vegetable, you can buy fennel teabags and you can also get fennel seed which are used as a spice. You can also use them to make tea with.

yes megafee is right. we also use it in our food it is like licorice and we use it mostly in our food and also everyday as mouth freshner.

i add salt and turmeric powder and enough water and roll the fennel in it then make it dry in the sunlight.the same way we do sesame seeds as well and both of them we just roast it seperately in a pan with very slow flame which turns the fennel and sesamme crisp.after that mix them together and the mouth freshner is ready to eat , put in the airtight container and can keep for a year.
eat after every meal just pinch of it . wow. you will definately enjoy it.
we also mix in many of our indian dishes as well

I LOVE fennel!! I chop the bulb and eat it raw in salads. The rest of it goes into soup or stew.

Many people are more familiar with its tops, fennel fronds, which are used as a fresh herb, or as fennel seed, used in spice mixes as well as sausages and meat-type mixtures. It tends to have a somewhat licorice-y flavor.

The bulb of the plant is the "vegetable". I use it two ways. Prep is the same either way--trim any fronds/stems from the top and slice off the dry end of the base. Cut into quarters and remove the solid bit of core from each quarter. From there, I either cut it into wedges and roast with olive oil, salt and pepper (goes great with shallots, or as part of a roast veggie dish) which gives it a great carmelized, lightly sweet flavor. Or I slice it very thinly and add it to coleslaw or a fridge-pickle mix of cucumber and red onion. Lightly pickled or marinated, they're crisp and slightly spicy. Excellent in spring and summer!

I am currently reading a book called "101 Foods That Could Save Your Life" by David Grotto and fennel is one of the foods. All parts are edible and it cooks like a vegetable. I'm sure there are recipes at Spark. Pick up the book, it's a great thing to have as a reference when you're going to cook a meal.

i'm half italian, and i know it's quite popular in many italian dishes-- especially when it's transformed into the spice anise. it's a very strong flavor-- the star anise are popular in asian soup bases, like pho. that's about all i know about it! :)

Well, on my way in to work today, I overheard two people talking about some kind of vegetable they called fennel. I am unfamiliar with it.

I did a search online for it but I would love to hear if anyone has any personal experience with it, how to cook it, what it tastes like, etc.

What are your thoughts about fennel?
