The biggest problem with soy sauce is the large quantity of sodium. You can find lite soy sauce that isn't so full of sodium. Many varieties of lite soy sauce have more than half of the amount of sodium.
Lowry's makes a nice variety of marinades and they are low in fat, sodium, and calories. You find them on the same aisle in the store as mustard, hot sauce, and bbq sauce. They are tasty.
You can also make your own. Try putting in the juice of one large lemon in a bowl, drop in some chopped garlic, cilantro, a pinch of ginger and pinch of basil. put in your tofu and add enough cold water to completely cover the tofu. Stir it up well and let sit for a couple of hours. Overnight is good. That works very well in a veggie stir fry.
You can also marinte in a sweet and sour mixture. Add 2-3 tablespoons of rice vinegar into a bowl. Add 1 teaspoon lemon juice, 1/3 cup of sugar. You may use a sugar substitute. Mix very well and add your tofu and let sit.
It helps to cut your tofu in bite sized pieces before adding to marinade. If you need to thicken the mixture once you cook it, just use some corn starch.
