Thanks. I had tofu again tonight, and used a little of the Bragg's and them breaded it and baked it. By far, this is my best way to eat it! I also sauteed cabbage with no oil and used seat salt and lots of garlic. Very tasty! I have to slowly get myself off salt.

The biggest problem with soy sauce is the large quantity of sodium. You can find lite soy sauce that isn't so full of sodium. Many varieties of lite soy sauce have more than half of the amount of sodium.

Lowry's makes a nice variety of marinades and they are low in fat, sodium, and calories. You find them on the same aisle in the store as mustard, hot sauce, and bbq sauce. They are tasty.

You can also make your own. Try putting in the juice of one large lemon in a bowl, drop in some chopped garlic, cilantro, a pinch of ginger and pinch of basil. put in your tofu and add enough cold water to completely cover the tofu. Stir it up well and let sit for a couple of hours. Overnight is good. That works very well in a veggie stir fry.

You can also marinte in a sweet and sour mixture. Add 2-3 tablespoons of rice vinegar into a bowl. Add 1 teaspoon lemon juice, 1/3 cup of sugar. You may use a sugar substitute. Mix very well and add your tofu and let sit.

It helps to cut your tofu in bite sized pieces before adding to marinade. If you need to thicken the mixture once you cook it, just use some corn starch.

I was just coming here to post something similar! My problem is I love tofu, but it has to first be marinated in soy sauce, or a blend of soy sauce and other stuff for me to really enjoy it. After watching the Biggest Loser episode were Kim tells B not to marinade in soy sauce (even though I knew it was bad before she said it) now I need to find alternatives. Any suggestions for a good salt-free tofu marinade will be greatly appreciated.

I agree with BSHOWELL - Mrs Dash makes some nice seasonings without salt. I am a hot "freak" - if it's spicy it's on my list ! I have been veggie for over 20 years, my son has never had any "animal products". He is a healthy & happy 16 yr. old !

If you use fresh veggies, you can avoid salt completely. If you want to add a little flavor, you can use things such as a little fresh lemon juice, onions and/or fresh garlic, a pinch of ginger, thyme, basil, parsley, marjoram, cilantro, celery seed, chopped leeks or scallions or shallots, or others spices and herbs. Herbs spices make nice ways to flavor your food in a healthy way.

Experiment with different ones to find a taste that you like. Different combinations give different tastes. Play around with them until you get it just the way you like it.

Balsamic vinegar with or with out flavors such as fig or raspberry is great and so is Bragg's (a sort of soy sauce and is a bit salty).

I rarely use salt. I use flavorful oils and spices instead.

I don't use any salt or oil in my vegetables (for example) at all. I rarely season because I like the taste of the vegetables themselves. However, I do like Mrs. Dash seasonings - particularly the lemon pepper and garlic & herb.

Salt is very easy to leave out of most recipes unless you use a lot of prepared foods that have salt already in them. Soups are a wonderful way to go. Just leave out the salt and season with spices. Hope this helps, Peggy

my ex bf is vegetarian and it's hard to find a recipe that don't have salt and oil. steam only.
