I've gone vegetarian for lent and I find that it's easiest to just relace what I'm used to. I put soy crumbles in for ground beef in recipes and "chick'n" strips in for the chicken. I think that's a lot easier for now than just saying good bye to everything I am used to.

Have you considered being a Flexitarian instead. That is bascially a sometimes vegitarian. Has the same health benefits and you can eat meat a couple times a week if you so chose. I am finding no problem transitioning since I know I can have meat if I crave it. You can also just start only eating meat as a side dish in small portions to get your self used to it. Good luck!

We just went vegan, fast and furious. Maybe we're lucky but there hasn't been any problems adjusting. There are so many choices out there and when you cut the garbage you taste so much more. It's all de-lish!

I would recommend slowly cutting things out so your body can adjust. Start with red meat, then work your way onto chicken and fish. I've been vegetarian for 10 years now, and vegan for 2, and it's all about doing it gradually but sticking with it! Before you know it, it will be really easy and you won't even have to think about it.
