The eggplant recipe sounds great! I can't wait to try it. I use garbanzo beans with stewed tomatoes (Mexican flavored ones) and heat them up in a pan on top of the stove. I add spices, just as garlic powder, turmeric & curry powder. When heated, I spoon over already made rice to make a quick meal. This is also very good and cheap.
Hi..I am also a beginner at this, but I just don't like meat..my family does (mom & brother) so it is a constant struggle! I don't know how you feel about eggplant, but this is something I make quite often and it's simple..
Cut unpeeled eggplants in half lenthwise, and scoop out flesh inside..save the shell..
Prepare enough rice for all members of family (not an exact science, I adjust it depending on who is home, etc..)..and i use brown rice, but white would be just as good i think.
In a skillet, heat some olive oil (2tbsp), add eggplant, cooked rice, and stewed tomatoes (I use a large can, adjust more or less to your taste)...Season with salt, pepper, red pepper whatever you prefer..saute until eggplant is soft..
Scoop sauted mix into "boats", the eggplant shells you kept earlier..bake in the oven @350 for about 10-15minutes to get hard on top...sometimes I will put some provolone or shredded cheddar cheese on top..
This is a simple recipe, and it is surprisingly tasty, and very satisfying...
