What a great opportunity to share what life is like when you have food allergies or intolerance! Many people do not understand what our life is like. They can’t really know but we can give them some insight. Here’s a great website: http://www.celiacsyndrome.com/index.php?id=10

You might think about having quiz, during your training to see if people can detect the safe foods.
Food Name OK for Gluten-Free? OK for Lactose Intolerance? OK for ?? diet?
Spaghetti Yes/No Yes/No Yes/No
Pancakes Yes/No Yes/No
Hamburger Yes/No Yes/No
Hot dog etc
Scrambled eggs
Fried Chicken
Green Salad

You might come up with suggested menus that include many types of diets:
Baked chicken – watch the seasonings! no stuffing, no gravy
Fresh steamed vegetables
Rice – no mixes or baked potatoe

I am running a seminar for Girl Scout adults in a couple of weeks on "Dietary Inclusiveness" on the importance of planning meals and snacks that everyone can eat when working with groups. The seminar will include allergies, medical requirements and lifestyle choices so it won't just be about GF foods but also lactose, vegetarian etc. Since I know a lot of Celiacs also have other dietary challenges, I'd love some input from all of you! I'm planning to give an overview of dietary challenges, the emotional impact of feeling left out or different at group meals as well as some food samples.
