Since my diagnosis I've delved into much reading/research and know a couple things for sure: we need gut health for overall health. Your gut health can be compromised by many things, not just celiac disease. Either way wheat and dairy are not recommended. Though kefir and/or probiotics are if you can tolerate them. Some people have candida and have to go off all grains/dairy/fruits/sugars. Some people have parasites or viruses, etc.
Seventy percent of our immune system is in our guts. I'm currently reading PATIENT HEAL THYSELF by Jordan Rubin (he's the author of The Maker's Diet, which I haven't read). He had Crohn's, which I've read is the same as celiac, just in a different part of the bowel. He's talking about much the same stuff regarding gut/brain connection as many other resources I've read.
You don't have to have a celiac diagnosis to benefit. I hope this makes you feel better and encourages you to continue on your healing path.
Back surgery? Why? (My BIL had back surgery - through his stomach! He thinks they put back his intestines wrong as he's never felt the same since. He also says he's wheat sensitive but will not embark on a gf diet despite my info. Then again, he's a head case ;-) ).
