I've adapted this from "The Gluten-free Gourmet Cooks Fast and Healthy" It probably would work well with lobster and maybe even salmon
1/2 pound crab meat (or GF imitation crab) 1/2 cup corn tortillas crumbled (I buy a bag and pulverize them with my food processor) 2 Tablespoons of light Mayonnaise 2 Tablespoons fresh parsley (I use less) 1 Tablespoon prepared mustard 1 large green onion 1 tablespoon red bell pepper Dash Worcestershire sauce 1 large egg beaten (or 1/4 cup egg substitute) Salt and pepper to taste 1 tablespoon oil for frying
I combine all ingredients in my food processor for about 20 seconds (until well combined) then form into 8 small patties (Larger patties don't stick together)
Heat oil in a large skillet and fry the cakes (it takes about3-5 minutes on each side) makes 4 servings :)
