Since posting, my son has had the pizza reheated in the toaster oven. I suggest making the pizza crust thin. The thick crust is not too good. I've been "thinning" the crust on the pizza I made, but future pizzas will be thin crust.

I have tried 2 different mixes from Gluten Free Pantry, and what I made was really good! I did the pizza, but I made about a dozen small rounds instead of the large crust. I froze them and when I wanted a little bread something I either just thawed one or popped in toaster or microwave. Think I need to go get more of that mix and do this again, as I have really been craving bread the last few days. (I have been on the gf diet about 3 months).

The other Gluten Free Pantry mix I have tried is a muffin/scone mix which also has a pancake recipe. I haven't ried the muffin or scone recipe, but made the pancakes (less ingredients: just orange juice, egg, and oil)...made them all, froze, pop in the microwave for a quick breakfast.

I sure preferred these homemade things to any packaged baked good I have tried (though I have to admit, I have only tried a couple). Most of the time, Im not that much into bread...though I was thinking I need to find a cake recipe that I could maybe make some cupcakes (sat around watching everyone eating birthday cake at work yesterday...the smell of the cake seemed to fill the whole building!) emoticon

I made a pizza the other night using a mix from The Gluten Free Pantry. It was easy and very good. A light, fluffy crust with no weird flavor.

I made a pizza crust recently using just the regular Pamela's Baking mix. That's what I use for most of my baking and I love it. Their website has a lot of info w/ different recipes too. :) It's still a little bit more complicated than using a ready made baking mix, but is a bit easier than trying to make that perfect flour blend.

Edit: Damn, I sound like a Pamela's sales lady half the time, sorry about that. It's just been my GF savior.

I'm going to try making my own pizza crusts. I found some pizza dough mix at Kinnickincik. I have tried the frozen ones by Amy but points are high on that and I have to make myself get my portions and put the rest away for another day or I could eat the whole thing. So I'm into cooking also. And we love making our own pizzas on family night. So I'm getting some of that dough mix and trying it out. That way I can maybe cut the calories in it. Still have some weight to drop and its not coming off as easy these days as it use to.....lol

Oh gosh those sound so good right now. emoticon

I'm really trying to focus on eating healthier, but I do tend to make cookies or some sort of baked goods on the weekend. I've found I really like baking and cooking in general more than I did before. Maybe it's because the food doesn't make me sick! Hehe. :)

As I said before, I do miss "easy" meals though. :)

I need to stop saying "if" or "when" and just do it. That's why I'm here. Let's do this together!

I've bought some from Kinnickinick I think thats what its called. But there not low fat. So I order them once in awhile. They are yummy. Guess I've crossed over and care now more about my fat and calories than even if it's gluten free....lol guess that's a good thing. Just wish I could get the weight now to drop off more. Seems like here lately I've been losing and gaining the same 2 pounds.

Have you guys found the chocolte gf doughnuts in the frozen food section? I've heard they're yummy, but haven't personally tried them yet.

Yahoo well thats postive.....I will take a weightloss anytime right? Yeah I'm with you I do miss the ordering pizza thing. And I've been finding ways around the chinese thing like me and huby making our own. My husband is chinese so we crave it often. He's been great about the whole thing also. But I'm with you there are just certain times where you want that burger from the drive thru. No matter how much you set up things for yourself. But in my case I'm glad it's not all the time or I would be nuts....lol Hang in there. think about the 6 pounds you lost and thing how great you look compared to that person walking away with one of those donuts....lol

Yeah, I think it is incredibly hard because the doughnuts are sitting RIGHT outside my cubicle. With office lunches, well I'm required to be there. :/

I went out and bought a drawer full of GF goodies. Some popcorn, dried fruit, soup w/ rice noodles, crackers and some curry tuna.

Despite it all, I want some fatty greasy chocolately doughnuts. I also REALLY miss being able to order pizza. The nice thing is I have lost 6 pounds from going GF from not eating so much chinese, pizza and doughnuts. Heh!

I need to stop saying "if" or "when" and just do it. That's why I'm here. Let's do this together!

I work with all women, so there's usually lots of chocolate and other highly processed foods at work. This is what I've done for myself:
keep a gf frozen meal in the freezer at all times
have a special treat available ex: pc of chocolate
have gum in my purse
take a treat to share ex. jelly bellies
have gourmet coffee
have a beverage to squealch my temptation
remove myself from "that" scene

I feel your pain. It would be hard for me to. I don't work outside the home so I'm fine until my kids and husband want to eat fast food. I'm always left out and thats when I feel it the worst. For the most part I do well also. But like you there are days where I just miss everything that I can't have.

Hang in there ....you are way better off without that donut.

I've been doing really good with eating GF. I've been eating GF for almost 3 months now and it's going fine. What kills me though is at work. Today someone brought in doughnuts...and I didn't eat breakfast because I thought I had yogurt here. I'm almost crying I want one so bad. Or when they eat company lunches... etc. At home, I've got tons to eat and my husband for the most part eats GF w/ me so I don't mind. At work though.... I desperately miss it.
