Hello. I have microscopic (also known as lymphocytic) colitis. That started 17 years after my diagnosis of celiac disease. I did find a new cookbook entitled Against All Grains. The author had ulcerative colitis. She does have great bread recipes but uses almond and coconut flours. These can be expensive but searching out various brands allowed me to find both at reasonable prices. She also has a list of websites at the end of the book for various ingredients that she uses.

GF On A Shoestring is a great cookbook as well.

I can't have any corn because the last time I had it it made my tongue swell and I don't want to take that chance and have other things swell and I be alone in my home at that.

I took a GF corn tortilla today and put my lettuce and tuna and some other veggies in it and wrapped it up! not the same as a bread sandwich, but it was all GF! LOL A friend is e-mailing me a recipe for GF crackers too! That should be interesting!

Me too! Found a store-brand which doesn't have any added flavors or salt--just rice. It is a great (quick) replacement when I want a breakfast sandwich (fried egg/cheese). When I want a cheeseburger or tuna sandwich, however, I generally just use a large lettuce leaf as a "wrap" for my fillings. Quick, economical, healthy, and functional.

I would like to comment on your post. I use the Rice cakes when I want a bread (which isn't very often). There are so many different types that they work out well. I am hoping to try to make GF bread in the future. I remember my mother used to make bread all the time...of course, it certainly wasn't GF. LOL I am on a fixed income and refuse to pay over 5 dollars for bread. I'd rather do without!

Sometimes it is cheaper to just make the thing that you want and it will have less sugar in it too. I have noticed that some of those GF are loaded with sugar.

I agree. I don't buy processed foods that profess to be gluten-free and it is much less expensive for me to live this medically necessary lifestyle. Good recipes and creative thinking are the key to doing this successfully.

I completely agree that if you stick to whole foods and stay away from processed foods, eating GF is not expensive. The one thing that I do find expensive is the GF breads and I have not yet mastered the art of making my own.

After being diagnosed with Collagenous Colitis, I had a really hard time finding anything that tasted remotely like bread so I decided to bake my own. Trial and error led me to "Gluten Free on a Shoestring" by Nicole Hunn, particularly the "Bakes Bread" issue. I love it. The only problem is that she uses Expandex which can't be purchased in Canada. I order it and pick it up in Niagara Falls at CDI (a mailing business primarily for Canadian use). Apparently Ultratex-3 is a good substitute and available in Canada but it's more expensive.
