You should try some coconut flour recipes. Low carb and gluten free.
Mock Red Lobster Cheddar Bay Biscuits
1/4 c. butter, melted
1/4 t. salt
2 t. garlic powder
1/4 t. onion powder
1/3 c. coconut flour, sifted
1/2 t. xanthan gum
1/4 t. baking powder
1/2 c. extra sharp cheddar cheese shreds
Whisk eggs, butter, salt, onion powder, and garlic powder together.
In a separate bowl, mix flour, baking powder, and xanthan gum. Whisk the dry into the wet ingredients. Stir in the cheese. Keep in mind these are biscuits and you should not overwork the batter. Mix only until all dry ingredients are wet. Drop batter into 24 count mini muffin tin that has been misted with olive oil spray. 400 degree oven for 15 minutes or so.
Per mini muffin .8 carbs, 45 calories, 3.7 fat, 1.6 protein. The fat is the healthy kind so don't sweat it.
