Wish it did not have cornstarch in it, I can't eat it because I am allergic to it.

oops, well, I'm the wrong person to ask. I thought that was the biggest scam and waste of $$. Regular Bisquick has leavening and shortening in it but they omitted it from the GF version for those that have other allergies but just makes it a very expensive box of flour blend that was very gritty when I tried it.

i bought some gluten free bisquick mix.. but cant find any muffin recipes for it... any suggestions

For biscuits this is the only recipe that works for me. I got it from a GF Friend.
biscuits

1/3 c. shortening
3/4 c. cornstarch
1/2 c. potato starch
1 3/4 tsp. xanthan gum
1 TBLSP. baking powder
1/4 tsp. baking soda
1 TBLSP. sugar
1/2 tsp. salt
3/4 c. milk

Preheat oven to 375*F. In medium bowl, blend all ingredients. Mix very well to remove any lumps. Dough will be quite sticky & soft. If you have a food processor, like I do, combine shortening and dry ingred & blend until "mealy". Add milk & mix until smooth. Roll or pat out dough on lightly "floured"-with cornstarch-surface. Dough should be about 1/2" thick. Cut out biscuits with a 2 1/2" cookie cutter. Or a glass works well too. Place biscuits on a lightly greased baking sheet. Bake 12-15 mins.

Note: these tend to get dark on the bottoms & stay pretty white on top. If you want the top to be lightly browned, you could do an egg or milk wash. You could also sub the shortening for butter or GF margarine. I've used Almond milk for these with no problem. Just make sure it's not Vanilla flavor.

For apple cinnamon muffins, this recipe is actually kiwi-lime but would be easy to sub apple butter instead. I've made these a number of times and love it.
