I am on the Putting Food By /and the Eating Whole Foods teams. Pressure canning is a must for low acid foods. Soup that has meat proteins fits this guideline. There are some well informed members with decade of experience. Explore the thoughts and threads there.

Our apple tree finally conked out (due to disease) but for many years it was just as you say. We often cut them up (cut out the icky spots) and blanched them, then froze in about gallon size bags. We cold-packed my whole life til I was an adult, then switched to a pressure-canner (same theory, does LESS at a time but FASTER, so you can "do more" in a day...

Also, the past 10 or so years, we FREEZE a lot (as the apples in blanched slices).

If I was home I could give you that info but I am not since my husband is going through a bone marrow transplant we have to stay in the area over 100 from the time of transplant and that happened in February. I do still have my books, you could email them to see if they will send you one.

I will be using water bath method to try and can. It all depends on if I have enough produce from the garden and if I can find another Ball canning book, ( I lost my other one). I need to know how long to do tomatoes, green beans, pickles, and applesauce. We have 3 apple trees on the property but they don't spray them or take care of them so the apples are all small and wormy but still usable. Hate to waste them plus the middle of winter it's nice to have warm applesauce to eat. Yum! Lucinda

What type of canning are you doing? If it is with vegetables then there is no flour in them. You blanch then and then you put them in jars and pour hot water into the jar to cover them and you add a teaspoon of salt. then you pressure cook them for the time that it calls for. You need a canning pressure cooker and it is bigger than a normal one, You will find them in ACE Hardware. You can get a canning book from "Ball" the maker of the jars that you use.
