I make a batch of hard boiled eggs on the weekend and use those with some fruit or cherry tomatoes. I also do avocado sometimes with that.
Egg salad wrapped in ham, lettuce or on GF toast. (does mean some prep ahead)
Larabars are a staple, I carry one in my purse at all times!
You can make muffins ahead, or what about a GF sandwich? There are also very good GF waffles. I stick mostly to whole foods but if you like the replacement products there is a lot out there.
