Nature Valley's crunchy granola bars are my go-to breakfast when I'm in a hurry. I buy the variety pack with Oats & Honey, Peanut Butter, and Cinnamon bars, all of which are gluten free. Most of Nature Valley's other granola bars are gluten-free too, just double-check the label!

My quick breakfast is a Tiger Milk protein bar. I buy them in bulk at the grocery store and I bring them when I travel.

Have you tried the Think THin Protein Bars? THey have them at Kroger's here in HOuston, as well as many other stores. THEY ARE GLUTEN FREE!! I can only eat two flavors because of my other allergies, but I find them quite filling. THey are also easy to eat in the car if you're really on the run.

An option that I have done is making crustless quiches in a muffin tin. Then you freeze them. When you want to have one--you can take out and it will defrost then eat cold like a spanish frittata or pop in microwave for a minute or so to warm up. Then pop in your mouth.

I have made a large batch of GF pancakes then froze them. I have then take a couple out and either pop in microwave enough to make them pliable and warmish or leave out to defrost-then smear with peanut butter or some other nut butter or just dip in jam.

Some people do stay away from it and it can make you sick if it is made in a factory where wheat is also in. But you can find others that are not in those types of factories.

I haven't gotten the nerve up to try oatmeal yet, but I will keep that in mind when I do. I had heard that I should stay away from it for almost a year before doing a trial. Is this true?

I cannot eat Quaker Oat Meal but I can eat nature's valley's granola bars and the bulk oatmeal in the supermarket bins, go figure.

There are a lot of GF bloggers out there that have muffin recipes and they make the batch and freeze and grab and go when needed.

Wow.. Thank everyone for the great ideas. I'm not shure about oatmeal yet, since i've only been GF since December 19th, and from what I have heard it is still too early to do a trial. The last time I got glutened wasn't pretty and i'm not looking forward to repeating that. Its wierd that they tell me i'm only intolerant yet when I get glutened I react almost immediately with severe heartburn (it often starts after I swallow the first bite!) and if there is enough gluten in whatever I am eating (like bread) I break out in an allergic dermatitis all over my face that likes to stick around for two to three weeks. Maybe I have the wheat allergy and not the gluten one or something, but either way, i'm good without it. People tell me I look young for my age, but I don't need people thinking i'm going through puberty again!

The hard boiled eggs and muffins sound like fantastic ideas. I have tried the lara bars and they are good but im not sure I would want to eat them daily. I am hoping for a new job soon that allows me a little more time at home and a flexable schedule so hopfully I can get my act together!

Thanks everyone!

I get the Odwalla bars and there is no wheat in them but they are made with oatmeal and some people can't handle that but it is good and if you have no problems with it then you should get some. You can go on line to find where they are in your area.

I make a batch of hard boiled eggs on the weekend and use those with some fruit or cherry tomatoes. I also do avocado sometimes with that.

Egg salad wrapped in ham, lettuce or on GF toast. (does mean some prep ahead)

Larabars are a staple, I carry one in my purse at all times!

You can make muffins ahead, or what about a GF sandwich? There are also very good GF waffles. I stick mostly to whole foods but if you like the replacement products there is a lot out there.

Have you tried Kind bars or Lara bars? I've never been a bar type of person but have heard theses are good. Last time I checked coupons.com had a coupon for $1 off 4 Lara bars. I'm sure others will give their favorites.

You can make a big batch of muffins on the weekends, use almond flour and add chia or flax seed meal, etc for added fiber and protein. Put them in individual bags and freeze then take them out and heat it in the microwave for a few seconds as you're running around, or try to remember to take out the night before to thaw.

I am the type of person that is always running late, and I would just grab a granola bar or muffin as I was on my way out the door to work. Since going gluten free, this hasn't been an option (I don't like the gf breakfast bars that I have found). I was wondering if anyone had any tips or ideas about something healthy that I could eat on the go.
