Well, I tried to figure it out by adding all the ingredients into the food groupings. It should add up to about 132 calories per cookie (if you make a dozen). Not exactly low cal...but less than a granola bar...lol

Yes, that's exactly what I used. You might need to adjust milk up or down depending on humidity in your area. We're really dry here, but if you're in a humid area, you could probably get by with a quarter cup. I made these just today and they really turned out nicely.
By baking mix, do you mean something similar to Bisquick....such as Bob's Red Mill's GF biscuit mix?

Light a candle or burn a bonfire for inspiration and health.
1 C. GF baking mix
1/4 c. canola oil
1/3 c. fat free milk
3 T. honey
2 T. orange peel
Shape into balls, flatten slightly (it helps to spray some PAM on your hands). Bake on a greased cookie sheet 15 min. at 400 degrees.
Cool on a wire rack 5 minutes. Makes about a dozen cakes.
You can also shape them into crescents for your simple feast.
