I have no idea. The biggest problem with nutrition plans like that is whether the person truely knows what gluten free is. And many of us also have other allergies/intollerances. Myself, I can't digest pork anymore. Many are allergic to eggs, dairy, soy, etc as well as being gluten free.
Your best bet, talk to an educated nutritionist in the field.
First thing I did was get a list of all ingredients/foods I had to avoid. I spent months reading every label. I still do. Funny how one flavor of an item is okay to eat, while another flavor - same brand everything - I can't eat.
If you are in a jam, I have found as a general rule of thumb, if it's not processed, it's more likely to be safe. Fresh fruit, vegetables, meats that have no sauces, etc. It's so hard. When you go out, even some of these rice side dishes are contaminated.
If I can't get access to the label to read it, I won't eat it.
