DOTSLADY, You are top of everything. Yes, i am new to this way of eating. It's only 3 months now I am not craving any wheat or gluten i just happened to buy the gluten free oats from whole foods. I stop eating them. I am taking digestive enzymes, plus amino acids. I just need to let it heal my gut to feel better. Right now i can handle grain rice, fruits, all kind of veggies and lentils.

You might be able to tolerate oats after your gut heals more (if I remember correctly, you're kinda new to gf diet). It is recommended to wait at least a year. I tried a serving of gf oatmeal for bfast and a gf oatmeal cookie at the year anniversary, and couldn't handle it (ran to the bathroom). I waited another year and could. I ended up ditching them anyway in favor of no grains, or Paleo diet.

Maybe you could talk to your health care practitioner about taking digestive enzymes to help with protein digestion? If you don't digest your protein, you're not getting much nutrition (regardless of sources). Or ask about taking supplemental amino acids in addition to, or instead of digestive enzymes?

I agree with you on rising the quinoa - helps a ton. I put it in a ton of things. My favorites are:
BREAKFAST: mix 1/2-1/2 with either brown rice OR gf oats, add cinnamon, walnuts, dried fruit and a smidge of maple syrup and warm soy-milk.
LUNCH: Mix with lots of veggies (cauliflower, broccoli, tomatoes, red bell peppers & cucumbers are my favorites), some beans (both black and garbanzos are good), a little homemade vinaigrette and a touch of feta cheese (or greek olives).
Yummy!

I can tolerate 1/4 to 1/2 cup GF oatmeal, I have to have protein with it or my blood sugar spikes and my head gets all woozy.

For me, the rinsing with a fine mesh sieve really, really helps. Personally I don't think quinoa has a taste other than whatever you're adding to it!

AMBER, I saw those quinoa recipes on your blog. I am going to give another try to quinoa soon and let you know. This time i am going to try to rinsing it and than cook.

I can't handle meat either. The taste! Blech ;)

Personally I love quinoa. Rinsing it REALLY well helps with the taste in my opinion. I have used it mostly in savory recipes, but I have had it for breakfast before too cooked with cinnamon, brown sugar and banana.

CINDY, I try quinoa once but i didn't care for taste. May be one more time i am going to give it try to quinoa. I am trying hard to get all my protein in but it is very hard for now. I plan my meal every morning to see how much i am getting my protein in. I never know till i join the SP that i am way too low in my protein. I made homemade my own protein bar that i carry with me all the time. Only problem is that have good fat in them. If i eat more than 2 my fat range go up. So i limit only 2 a day.

I bet it is tough getting it in...do you eat quinoa? That is supposed to have a lot for a grain because it is a seed really.

CINDYTW, My protein is always way too low. But recently i bought a vegan protein. it made out of peas, hemp and all the vegan base. one is Spiru-Tein Protein Chocolate, and another one is Jarrow Optmal Plant Protein.

I have not heard of many people who can't handle meat. Eggs and dairy are common...What do you eat for protein?

I thought I had trouble with corn, but have found that if I eat the nonGMO stuff, I can eat it. I'm okay with GF oats, and am so thankful for that.
I do understand that some people have difficulty with either one of these, but what a bummer!

My stomach can not handle meat, eggs, dairy. I was doing fine till i add oats in my diet. I noticed every time i eat oats in my breakfast my stomach get upset and bloated. My stomach is very sensitive. I make my own meal plan and i cook from scratch. My goal is go grain free. I am gluten free since this year January. At first it was very hard but now everything under control. I do not miss any bread. I do not like any gluten free bread out in the market.

I love the gf oats but they are a bit on the high glycemic side for my diabetes. You can make tortillas out of any bean flour. Garbanzo bean flour makes a great one.

I am SO glad that oats seem to work fine for me. I eat them every single morning so that would definitely be frustrating.

I do seem to react to corn tortillas as well as the regular flour ones. I'm tempted to make my own I just don't know out of what!

There is a percentage of celiacs that will react to gluten free oats...and there also are those that react to ALL grains. All grains have glutens of differnt types and we can really react to any of them. I would try going grain free...why can't you eat meat?

Bob's Red Mill Gluten Free Whole Grain, Rolled Oats. I bought oats from whole food store.
I react to oats. Is any body have problem with gluten free oat. I can not eat meat either. Looks like one day i am going to be only liquid diet. Only grain i can handle is rice.
