a good cake is hard to say no to! I am thinking it might be good to make the stuff into muffins and then freeze them individually for snacks or whatever. It would make a good breakfast too. minus the frosting.

I have made the Pamela's gf white cake mix into a carrot cake, but didn't add any coconut. It is also good made into muffins/cupcakes so that some can be frozen. Since I am the only one eating them at my house I need to keep myself from eating the whole thing at once.

Sorry i didnt answer this in the last post, too much multi tasking going on here. the mix was about $5. which is way too much for a casual, let them eat Cake kind of day. But i wanted something good and so far, i haven't found many recipes that i just loved. and the GF brownies by Betty crocker was really good. So i figured what the heck? Anyway, it was awesome. the mix ins really just made a huge difference. I was thinking about adding chopped apples too next time.

ok, this is DebbieRNDDHC under a different name, due to using this site with work as well, i had to create a persona so i could actually blog about what i actually CARE about on a personal level and not be censored. Anyway, the cake mix is a spice mix. it was so good. My mother in law came over yesterday while i was at work and my dtr gave her a slice and she liked it alot too. It was really easy to make, and I loved just the measure and dump ease of creating it. I would be very interested in a recipe for carrot cake that someone else uses that didnt use a mix. I have all different kinds of flours and such and would love to try some better recipes! thanks guys, i didn't get worked up over the tip on links, i know how to add them to the tops, but not about how to add the link in the posting.I assumed that no one would be typing, just copying and pasting. but the cake was awesome and i have 4 non gf people to commend it!

Full Circle is a store brand of several grocery stores, not just Lowes. Tops, Giant, Martins are the ones I know specifically...

I posted a link to the recipe. I looks really good, but to be honest I will continue to make mine the old fashioned way. It is a spice cake mix if I recall.

I was going to ask if you would post the recipe, but duh? I'm sure you threw away the box. emoticon

You should be able to take almost any GF cake mix and alter it to fit the one on the side of the box.

We don't have those grocery stores in Dallas and there is no guarantee the recipe would be on the side of a box I ordered online.

If you are able to get another cake mix with the recipe on the box will you please post it?? It sounds absolutely fantastic and my mouth is watering at just the description of it.

It was called Full Circle, but i believe it is a dedicated Lowe's food brand. it is organic and soooo amazing good. I am sitting here wishing it was in my lunch box right now. I can make it to i get home!

I had to tell someone. yesterday i used a mix from my local Lowe's food over the weekend. It had a recipe on the side for making it into carrot cake. You added shredded coconut, grated carrots, raisings, pecans and crushed pineapple. Frost with cream cheese frosting. Now, i am not saying that this was low cal, but it was awesome! the family was complaining when they saw on the mix that it was gluten free, but i said, oh don't worry, i can enjoy the whole cake if you don't like it. and once it was done, cooled and frosted, i ate and piece and i said to them, No, i am sorry it is horrible, I am going to have to eat the entire cake myself! Well of course they tried it, and loved it and everyone went back for seconds! it was moist and flavorful and had no crumbly grittiness. Plus it was whole grain. yummy!
