Spaghetti squash is definitely a good pasta options. I really haven't worried about carbs from pasta. I eat the Tinkyada brand and that's it. Since starting back on Sparks and eating better I've actually been under my supposed carb grams that Sparks and the USDA want me to have. Which works for me cause I actually lose instead of gain.

In terms of taste and texture? I've tried the De Boles and thought those were disgusting. I need to go back to the old grocery store I used to work at and get their soba noodles. Different flavors like pumpkin or sweet potato. Only thing bad with them is there isn't enough.
I haven't found anything to replace my egg noodles either but I did find spirals that I use for tuna casserole now. I'm from CT, and Stop & Shop carries a brand called Timkyada in their organic section. It's organic brown rice pasta and so good you would never know the difference. If these are the shiritaki noodles, plain they are absolutely disgusting. Maybe if you had enough sauce for they to soak up they would be edible. Several years ago when the shiritaki noodles were touted for their health benefits I ordered some and they all went in the compost pile.
