It upsets my whole system. Thirty to 35% of the protein in wheat is glutamic acid, so many people who are particularly sensitive to wheat may also be very sensitive to glutamic acid.
Glutamic acid is a non essential amino acid that works as an excitatory neurotransmitter in our nervous systems. For those of us that are sensitive it becomes an excitotoxin and has been implicated in many nervous system diseases like strokes, Alzheimers, autism and epileptic seizures.
