Debbie I get the same symptoms. I started going gf in July of 2009 and in the process of going gf I ate some gluten just one week later. Some people it takes a while to get into your system. Mine it took about an hour. I got really sleepy, a horrific headache, dizziness and had to go the bathroom the minute I got home (the scary part is that I was driving and came close to falling asleep at the wheel). The longer you are gf and you ate some gluten the sickness will get worse.

I did a dumb thing last night thinking that I do not have celiac and ate a handful of my hubby's cereal and within 10 min I felt like I drank too much liquor. If you plan on being gf, please stay with it as the longer you are gf the better you will feel and if by chance you ingest some gluten you will get sick. The last time that I had gluten I almost got sick to my stomach.

ok another quick question, if you don't mind. I have been weaning off the gluten this past two weeks, really getting it out of the diet. all overt gluten was gone and yesterday i had none at all. Until late last night. we had my husband's birthday party and someone brought a rum cake . I didnt eat any there, but when we got home, about 10 or 11 last night, i gave in and ate one tiny bite. It tasted like pure rum. anyway, this morning i was fine, zipping along to work, fine as ever. I got here, i heated up the bread, put some peanut butter on and started nibbling while reading email and drinking some coffee. flavored and i didnt read the ingredients. Anyway i am sitting here and i feel really bad. My head is feeling light and my stomach is churning and i feel like i want to throw up. I didnt even eat the equivalent of one slice of bread. I feel like i can't think good and i really want to curl up in a ball. my blood pressure is fine, but my pulse is racing and my blood sugar was higher than i have ever ever had it at 159. I don't have diabetes and usually my blood sugar bottoms out. had an episode of bottoming out the other day that happened really really fast and nearly fainted in a store. Is this common? what do you feel like if you get gluten ?

Debbie you are welcome. When I take any of my bread out of the freezer, I just put it in the toaster oven and it is really good. You may want to put it in the microwave for about 5 secs and then put it in the toaster oven.

Thanks CTravel! I need to see if there are any venders in my area. just to give it a try. I only like one beer and i have been told by beer lovers that it doesn't really count as beer cause it is a light beer. So my world will keep on spinning! Wine is not off limits so that is the most important!
How do ya'll defrost or reheat bread that you have frozen to keep from disintegrating? I made a loaf of that GF Pantry and put many slices in the freezer. This morning i grabbed two slices to take to work to eat for breakfast. I put it in the toaster oven first and thought, nope, that isnt going to work, then i put it in the micro on defrost. But i have to complain for a second, my dh took it out of the oven for me while i ran to pick my son up from youth group. the bread wasn't very brown and in the very center it was not done. so today i am nibbling around the edges of the nasty mushy center. yuck. but the edges rock! thank goodness.

Debbie thanks for your post and do agree with you.

My BIL is celiac and he drinks gf beer. He said it is not too bad. Of course, he says it's not the same as beer. I do not like beer so I am not one to really comment. I am only saying what I heard my family member said.

When I go to a new place to eat, I always call first and ask if they have a gf menu, and if not, I then ask if they have a dedicated fryer for french fries. Some places do and they do not have gf menus but that is ok. You have to be your own advocate for sure.

Thanks CTravel! I know that both terms are definitely used, as i said, two of the popular books to explain the life of celiac and gluten free, use those very words. And if a person thought saying cross contact might come across and be better recieved and thus get more cooperation from a certain restaurant than I am all for it! I know the level of explaining i have to do about the whole shrimp lobster crab thing. and that is life threatening! How crazy must it be if you wonder if the server is just thinking you are being picky? It is enough to make me afraid to eat out. Once upon a time, as long as i didnt go to Red Lobster or a Fish Fry place, i could get safe meals, but now all the major chains serve the forbidden foods and I have always worried about stuff being stir fried in the same pan, or on the same cook surface etc. It is really scary. Maybe i can clone myself and have a "wife" to stay home and cook meals for me every day so i dont ever have to eat out? and maybe i will grow to be average height? Hey, has anyone actually tried GF beer? just curious!

When i was reading one of the For Dummies or Idiots Guide books, it used the term contact for when one gf item actually touched another item, such as gluten free roll placed in basket with other regular wheat rolls. or put on the same plate as etc. and contamination was from using same utensils or pans. That a particle of gluten remained on a surface and thus contaminated the food. and really, the term contaminate is a scientific word with a real definition, set standards by FDA and the allergy act etc. It isn't one that we celiacs got together and came up with on our own one day. "Cross Contamination is when we carry bacteria from one object to another object; from one object to a person; or from person to person." whereas the term contact is neither legal term, nor a definition the FDA uses or endorses. Whether or not a food is cross contaminated has major consequences, not just for a celiac but for persons with food allergies. So when we are concerned about contamination, we are using a term the restaurant should be familiar with. They have to meet standards for this not just from cleanliness standpoint but also for celiac and allergies. The average server or waitress might not "get it" but the owner or manager sure as heck should. It frustrates me when i have to explain to someone at a restaurant, "No really, i cannot eat hushpuppies cooked next to the shrimp in the same grease, it will kill me. I will die right here in your establishment in a very short amount of time" and now that i have celiac, it is a whole different ballgame entirely. We shouldnt have to go to such levels. I have yet to have the gluten conversation, but will be having it soon enough... so, i would say, in answer to the earlier statement by a family member, that while contact might be the term she feels is most easily understood by the population at large, cross contamination is a legal and medical and scientific term to describe the actual process.
I hope i didnt come across as intense there, but the food allergy thing is a big hairy deal in my life and the added gluten thing has me concerned. We surely don't need to be worrying about terminology when we want to communicate our needs to people! insane.

I say cross contamination as well. I had never heard of saying cross contact. That is an interesting way of saying it.

I do understand the need to let the restaurant know of the problem without having them think that their place of business should be condemned. How we say things does make a difference.

You know I never thought about a difference and I see the point. The problem I see is that cross contamination is the accepted term, I have never seen someone say cross contact, it's kind of like how we say gluten free when it should be gliadin free since all grains have gluten but only the ones with gliadin are the ones that causes the issues, except for the small percentage that can't do any grains.
my mom doesn't work in a restaurant but in a food company and she uses the term cross contamination.

It just makes me think of times when I have just described it as a gluten allergy.

While that's not true, most people don't understand what Celiac is. People understand words like allergy and contamination.

I totally agree with what all of you are saying but my sister who was a group leader for Celiac was telling me that and just the wording would mean that particularly any restaurant would think you are saying they are not clean.

I see it as my food has been "contaminated" by gluten particles. Doesn't mean that it isn't clean, just that I can't eat it!

I guess I just thought that cross contamination happened if a piece of gf bread was toasted in a toaster that had toasted regular bread, not that the breads had touched. It doesn't really have to do with the cleanliness of the restaurant, just the knowledge of how to keep things separate. More education about gf standards probably needs to be learned. (I think many people probably figure that a little bit can't hurt too much. I wish those people could feel the pain that can be caused.)

I had mentioned several times about having cross contamination. I was talking to my sister that also has celiac and she said that cross contamination is not the correct way of saying it as you are referring that either the restaurant kitchen, a friends or even you own is not clean.

What should be said is CROSS CONTACT as that is referring that gluten has been in contact with some gluten-free food.
