I have a recipe for a TERRIFIC Moroccan Sweet Potato salad, if you're interested in something a little "exotic":
Couple of tips--when I roasted the sweet potatoes, I turned the broiler for about five minutes before I took them out. They really do cook fast, so be careful not to overcook them.

I am trying to think of a good recipe for sweet potato salad. Any Ideas? I have made my own mayonaise from Rocco Di'Spirito. I added a tablespoon of cranberries. I don't know, bacon bits, chopped apples, chopped walnuts. Any help will be appreciated.
