Here is mine from today:
B- 3 scrambled eggs, 1/2 avocado with lemon juice, 1/2 c. Zoi Greek yogurt, 1 c. black berries.
L- 3 oz. Foster Farms frozen chicken tenders (plain, no salt/seasoning) 1 c. mixed greens, 1 tbsp. olive oil, 1 tsp Apple Cider Vinegar.
S- Watermelon
D- Attune bar (not all are GF so watch out.)
I don't know what else I need to eat today. More calories, maybe another salad.

No, it's not on here. I'm sure there's many variations that you could find! Mine's pretty basic: Two cans of black beans (no salt added), a few stalks of celery (finely chopped in food processor), couple cloves of garlic (food processor), and a mix of green onion, red onion, and white onion (food processor), some cumin, some chili powder, some sriracha, some black pepper, an egg, some crushed up gf crackers, and some finely chopped cilantro.
These turned out pretty awesome, although I would make sure you add enough gf cracker crumbs and enough egg because these can be tricky to hold together. Either bake or fry.
My chipotle mayo is super easy. Get some mayo (I also mix in low fat sour cream or low fat yogurt to lower calories), a dash of tabasco, a bit of black pepper and garlic salt, and dice up a few canned chipotle peppers into it. Add some of the chipotle sauce in the can to it, too. Let sit for a couple hours in the fridge. Dip frys in. Enjoy.

I love this idea! I've gotten into a rut and becoming frustrated with what I'm eating. Plus I've been losing inches, but haven't lost any lbs lately. This will hopefully help with that.

What a great way to help people get more ideas about what we can eat on a gf diet! It's not that hard if you just make the decision, and educate yourself about other options.
My menu: Fage yogurt with blueberries, walnuts, and cinnamon Dry-roasted edamame with Craisins Homemade 3 bean salad with quinoa pasta mixed in Homemade Trail Mix of sunflower seeds, cashews, almonds, and raisins Apple Homemeade Black Bean Burgers (used lettuce for a bun) with Oven-Baked Fries and a homemade chipotle-mayo dip

Hehe, it's easy to understand our commitment to being GF when the alternative makes us feel so bad!
For today: B-Bob's Red Mill GF rolled oats (2 tsp brown sugar), black coffee L-garden salad with grilled chicken breast and light italian dressing, watermelon, cucumbers D-corn, grilled burger (no bun), raspberries
S-some sort of fruit (undecided at this point) or veggie sticks.

Hi everyone! I'm a newbie here, so I hope you won't mind my suggestion/question! I see so many topics here, and I am seriously in awe of all of you - your commitment to being GF is amazing.
Anyway, I was wondering if anyone wanted to participate in a daily menu thread. I notice that many of us either don't track, or that our food journals are private. This would be a great way for us to get ideas, inspiration, and it would also be a great way for new people to see how someone who is GF gets through the day.
Any interest? I know there are food ideas on another page, but I'm more interested in how you put it all together!
I'll start, and maybe some of you will join in.
B - Bob's Red Mill GF oatmeal w/ almond milk and PB (and coffee!)
L - Brown Rice with tomato sauce, cheese, and steamed broccoli
S - popcorn and a piece of dark chocolate
D - Lentil Sloppy Joes over a baked potato
S - GF lowfat brownies (used a Pamela's mix), and a 1/2 cup of non-fat fro yo.
