I am almost always fiber queen! I eat lots of salad (2 a day at least) snack on veggies and fruit, eat beans or lentils most days, and use whole grain things whenever I can (brown rice or rice blends, Mary's Gone Crackers Crackers, plain popcorn, quinoa). I batch cook things like lentil soups, beans, quinoa, chili and freeze portions. I eat cooked veggies plus salad for dinner usually. Flax seed meal and psyllium can help, but I think it is better to get things from actual food when we can.
I had the same question about a week ago. I've been eating a lot of sweet potatoes, wild rice (those Minute Rice individual containers have 5 grams of fiber in them, not all wild rice has that much, check labels) and also Smartfood makes popcorn clusters in individual packages. The cranberry almond and peanut butter apple are gluten free. The cranberry almond has 5 grams of fiber. I'm not sure about the other. I haven't been able to find it. I've been doing good with getting to 20 grams of fiber a day, but struggle with the 25 I should get.
Not everyone can eat oatmeal, but I have Bob's Redmill GF oatmeal with 2 Tbls flaxseed and blueberries for breakfast most mornings. I try to have a salad almost every day to which I always add black or kidney beans. I also eat nuts and apples for snacks. I have just discovered quinoa and LOVE it. Other than that, I don't eat grains much.
It's difficult to find ready-to-eat GF foods with fiber. It's best to stick with whole foods - I eat lots of fruit, vegetables, ground flax meal, and whole grain rice. Beans are also a good source of fiber.
Fruits, vegetables, beans, and nuts. All my snacks involve those. Yogurt with berries and natural peanut butter, veggies and hummus, and apple and almonds. I adore broccoli and cauliflower in most of my dinners, and fresh green salads. I throw beans in many dishes, black beans in Mexican, kidney or white beans in Italian, chickpeas in everything, and black-eyed peas are my new favorite.
