I caught my husband at the last second (he was cooking w/regular flour) and convinced him to make his corn muffins GF for me. We used unsweetened soymilk in the recipe in addition to the GF flour. They came out really good. I'm psyched!

Ah, thanks Pye. Of the three areas of pain in my hip, only one has subsided (but it's the one that prevented sleep, so I'm glad). The other two still twinge. I just work through it, hoping that all the pounds I'm going to lose will be the eventual answer.

Last night for din: sauteed mushrooms and gf deli turkey, with a bit of butter, fresh garlic, sesame seeds and flaxmeal. I'm thinking that sounds bland, but I like it. Maybe I will add a dash of SanJ wheat free tamari next time.

Thanks for the healthy meal ideas you guys!

For breakfast this morning, I had a Friday indulgence...

cinnamon toast! On Kinnikinnick rice bread. Not too terrible on calories, but useless on protein and fiber.

Dotslady, I hope your hip is healing nicely for you, and quickly. I pulled a hamstring muscle almost a year ago, and it is just now feeling a little better, therefore the increase in walking. Good for you on the weight loss! Who care how it comes off as long as it comes off?? Keep up the good work.

Lunch:

A chopped salad of yellow summer squash, red onion, cherry tomatoes, green bell pepper, 1 oz. smoked gouda chopped into little bits, and 0.25 cup kidney beans, all tossed in 1 tbsp light vinaigrette and 1 tbsp balsamic vinegar.

One serving of Mary's Gone Crackers.

I'm hungry again and I finished only a little over an hour ago, so I'm going to have a big apple and see if that holds me for awhile.

I've been working out at the physical therapist's for an old, I'll just say sciatic because I can't remember the other names, injury to my left hip. I think that's why I lost my 9 lbs actually! I'm on my own again though, so I joined a gym.

Good for you on loose pants! Woohy hoohy!

Hi DotsLady. Haven't talked to you in a while. I'm doing pretty good with the veggies. Trying to cook at least two everynight for dinner and then I fill up most of my plate with them. My pants are pretty loose so I gather I've lost a few more pounds. Walking a lot still and doing a lot of stairs to get to and from work every day. How have you been doing?

I've been feasting on chicken rubbed with salt, oil and dried basil roasted with sweet potatoes, carrots, onions, celery and carrots and dried cranberries . One big pot in a 350F oven, basted a couple of times. So easy and so good.
Made a batch of Kinni-Kwik Bread & Bun mix the other day. Added ground flax seeds and toasted sesame seeds baked in hamburger bun shapes. This bread is so good this way, it doesn't need toasting. It's chewy and moist.
Beautiful fresh apples and pears are plentiful now in the Okanagan of BC.

Breakfast this morning was a cup of mesa sunrise cereal with a sprinkle of raisins and half a cup of skim milk. I love mesa sunrise!!!

My sister-in-law gave me a whole slew of fresh veggies from her garden over them weekend, so hopefully this week will have some new meal ideas from me!

Hi you guys - I've been away too long (over in the "over 100 lbs" club. You guys eat WAY better, so I'm going to stick around for your great menu ideas!

Last night for dinner: chicken/cauliflower cabbage rolls (Blaine's Low Carb Kitchen, Food Network) - they were pretty good, and not as fat as when made with beef.

Pyeway: I see you've been talking about Eat to Live. I'm reading that and The China Study. Another cutie-pie mentioned E2L on her SP page, so I looked it up (can't remember her name). emoticon Good job on your upping the veggies! I'm trying also!

Dinner today was a tossed salad with 1/2 cup of cottage cheese for topping instead of salad dressing. A small bowl of red beans & rice. Some watermelon and cantalope.

Dinner was a baked potato topped with light sour cream, a tossed salad with vinaigrette, and a glass of red wine.

Then, since we still have leftovers from my birthday and I had room in my calorie-tally, I had a Namaste brownie with a little ice cream. That little brownie sundae was my most caloric "meal" of the day, even without whip, nuts, and chocolate sauce! As I said, I had room for it, but wow!

Dinner was fish fillets, brussel sprouts and Mock Potato Salad made with Cauliflower instead of potatoes. It was good, but I should have cooked my cauliflower a little longer.

I had a mix of Bob's Red Mill Mighty Tasty GF Hot cereal and Inca Red Quinoa, vanilla soy milk and a 1/4 cup wild blueberries for breakfast. One of my favorites. I make a large batch and then heat up a half cup each morning.

Slimfast is 180 Cal, 24 g of Carb, 6 gr Fat and 10 g of Protein

The Smoothie is 120 Cal 25 g of Carb, 0 gr Fat, and 4 gr of Protein.

The brand is Horizon, and it is organic. Made with fat free milk and 10% fruit juice.

Walmart carries it. My regular grocery store doesn't.

* 12 mths = 25284 cal/yr
That's more than 7 lbs a year by giving up Slim-Fast
That is a winning strategy. How does the protein intake of your fruit smoothie compare to the Slim-Fast? I am a huge fan of nutritious breakfasts.

Thanks for the warning on Slim-Fast. I have given it up. I am trying a fruit smoothie for breakfast. It is a 6oz serving and only has 120 calories as apposed to Slim-Fast with its 190.

Beer and Rye are definite No's. Wheatgrass is grass of wheat before it forms the head where the gluten is. Because of cross contamination, I would stay away from wheatgrass. Check out www.celiac.com as a starting point. There are lots of resources on the internet including Delphi Forums and the listserve I mentioned in a previous post.
If you are new to this, it is important to belong to a support group to help you.

FYI: There was a post on a celiac listserve with a response from Slim-Fast regarding it's gf status:

Quote: "Our ready to drink shakes and some of our snack bars may be gluten-free because they do not contain sources of gluten. Today I had a banana w/ cashew butter for breakfast, Peanut Thai Rice noodles, and apple and several, ok many, coconut macaroons - I just discovered they were gf - very very excited and went a little overboard at 130 calories for every 2, I am ashamed to say how many I ate. I bought the container of them yesterday and it is gone. For dinner I had a buffalo burger no bun, sliced tomatoes and french fries and an ice tea.

Yesterday I didn't get to eat breakfast and I had a hamburger no bun, baked beans and some potato chips for lunch and leg of lamb dinner with potatoes and min jelly and a salad for dinner.

Good news is I have now dropped 12 pounds, saw a new low this morning.

I practice the cook once, eat many times method.
Yesterday I made brown rice and Bette Hagman's Basic Beef Quartet adding carrots and celery to the recipe.
This morning I had an omellete with br rice, egg, Monterey Jack cheese, slice of turkey breast and a bit of Jalepeno sauce.
Lunch was the Beef Quartet over some br rice.

I just check the label on my can of Optima Slim-Fast. I don't see anything that would make it not GF. You'll just have to read the label on the can of powder. I don't think it would have anything bad in it.

I have the same breakfast everyday: GF toast, peanut butter, tea with milk. Today's lunch is left overs: ham, green beans and carrots.

Is Slimfast chocolate powder gf? I have a big container of it sitting in my cupboard and would love to know if I can finish it or if I have to give it away like so many other things in my cupboards after my diagnosis.

Envirokids makes good rice crunchy bars. I can't eat the peanut butter ones, but the chocolate ones are only 110 calories.
Envirokids makes the Panda Puffs, Gorilla Munch, and Koala Crisps cereals - all GF!

Rice cakes with just a sprinkle of grated cheese and jalapenos. (Can you tell I'm from Texas?!) Just nuke in the microwave for about 10 seconds. Something about the heat brings out what little flavor there is. It only take a tiny bit of cheese.
This was a favorite snack for my son and me on winter afternoons.

Good idea on the rice cakes; I'll try to keep a bag in the car for emergencies. It spurs me to think I should just keep a little GF bar in my purse, too. (I don't eat soy much; hypothyroid and all). Thanks!

Rice cakes are sorta crunchy. I like the bar-b-que ones. Haven't had them in awhile though. There are soy chips that are really nice and crunchy too. I will have to check out the calorie count on them.

I ate prunes and plain green tea for breakfast. Went to physical therapy and came out starving: got gas (for the car!) and bought potato chips to eat on the way home. They get the best of me. I need to nix them from my life cause I'm craving salt and crunch, but hate the fatty taste. Somebody help me!

This morning I had a half slice each of leftovers from last night's pizza. We made two pizzas, one with chicken apple sausage and pizza sauce and the other with shrimp and white bean sauce and dried sweet red peppers.

Today I bought a salad. Normally, I bring leftovers. That way I know what's in my food. Tonight I make spaghetti, so I already know what lunch is tomorrow! emoticon

Thought I'd see what kind of GF foods are being eaten. I just ate lunch here at work. I had one slice of "Food for Life" GF Rice Almond bread with a 6oz can of Tuna packed in water. I drank water with it.
