Thanks, Bailey. On the Betty Crocker chocolate cake mix, I wind up using a mix of buttermilk, coffee, chocolate syrup, and vanilla in place of the cup of water called for...makes a richer flavor...since I am a true dark chocolate chocoholic when I allow myself to have the stuff! It probably messes up the calorie count, but I eat it so seldom, that I permit myself the splurge when I do make it. emoticon

thanks everyone!!! Oh.. YES the lasagna was gluten free, she did not have to pick out any noodles, and my friend and I were talking about that last night as it would have been really hard to do so.

I guess her husband doesn't say anything because SHE doesn't. He told her at the dinner table that she just really needs to stop eating it and totally get it out of her system. She is one that thinks it's too hard or doesn't want to be a bother. The entire table encouraged her as they have found w/ me, that more and more restaurants are coming up w/ GF menus, etc. Avoid Applebee's at all costs until they get w/ the program!

The Betty Crocker cake was GF. I suggest beating it longer than it says to.

Betty Crocker has developed several Gluten Free Mixes that are not bad...and are at least quick and easy options when you need same...brownies, chocolate chip cookies, yellow cake mix, and chocolate cake mix. They are not inexpensive, but they compare favorably in price to other gluten free options on the market, and they are generally available at most larger grocery stores rather than having to go exclusively to a health food market.

It's great to be able to help out a fellow "Gluten Sensitive." Just a note for consideration, though...if your new friend is not aware of the "cross-contamination" issue...she could be come very ill from simply "picking out the noodles" from dishes like Lasagne that are made with regular pasta, bread, etc. The gluten will have "leached" into and contaminated the sauce. The same may be true for salads where you "pick off" the croutons, etc. My sister and I have learned this through painful experience.

Hi all! I just have to tell everyone as I know this team would understand it!!

We have a Daytona 500 party every year. This year, one of the guys wife (Kris) was going to come and I have not met her yet. I asked my BF to make sure she doesn't have any food allergies/issues. Well, you know... those that have are considerate of others! He gave his friend the menu and said it sounded fine.

So.. the day arrives. My friend was supposed to bring GF garlic bread and salad. Her bread machine broke on her (augh) So she walks in w/ regular garlic bread explaining the issue and said she found GF hot dog buns for me so I can still have some bread.

Kris perks up and said 'did you say Gluten free?' and it went uphill from there! She was so excited. I asked what she was going to do w/ the lasagna and she said just pick out the noodles.

I told her she could eat the bean salsa, the corn chip scoops, dinner, bread (hot dog bun) AND cake as I made the Betty Crocker cake. She was thrilled!

I gave her a ton of website info and also told her about Spark People too.

Just thought I would share. Made me feel good.

She had brought cookies from a bakery and quickly told me they were not GF! I smiled and said I figured. I mentioned that I my BF told her husband what was for dinner and he didn't say anything. She said he never does.

I am so fortunate my BF and my friend are so considerate of my Gluten issues.
