Yummy! Yummy! Yummy! and Yummy!

Thanks for posting the recipe....Biggest surprise, I found Teff flour at Bulk Barrel, in (formerly) Galaria Mall, London, ON. They got it in this week for the first time!

That is a great blog but it makes me hungry to look at it! I will try her gluten and casein free crust and see how it works.

Would almond meal work for a crust for a pumpkin pie too?

hit home that scroll to Feb 9th. This is GREAT I made it last week.

Or use any other cheese cake recipe you have and use almond meal for your flour for the crust.

I do chicken like that and it does taste great. I usually make extra and freeze it. Great to reheat in the microwave when you are in a hurry.

no problem. I only meant that you may want to repost your recipe there as it is a sticky topic thread.

I've used Ginger Lemon Girl's Cream Cheese Meltaway Cookie recipe as a base. There are suggestions in the Cooking/Recipe topics as well.

Could you make a crust using rice flour and rice bran (to give it the look of a graham cracker crust?) I haven't tried that but it should be possible. The cheesecake part wouldn't have gluten in it, would it? (Being dairy free - I guess I'm not the right one to be trying to answer this one.)
Happy Birthday to your DH tomorrow!

Hello! I have to tell you I made a GREAT healthy dinner last night that I had to share, it's totally GF and just at 30 minutes!
Heat your oven to 400.
Butterfly 4 chicken breasts and flatten. Lay a deli slice of mozzarella cheese and two slices of proscuitto (thin sliced salty italian ham) one one half. Fold the other half over and secure with toothpicks (if necessary to confine all stuffing ingredients). Place on a greased cookie sheet. Season with salt, pepper, garlic and italian seasoning blend on both sides. sprinkle a little EVOO over the breast to keep them moist. Bake for 30 minutes or until juices run clear. It's Chicken Cordon Blue and it's excellent. Serve with oven baked rosemary potatoes and salad. Even my beef eating hubby loved it!
PS_Does anyone have a great GF Cheesecake recipe? Hubby's bday is tomorrow and he wants a cheesecake. I would like to steal a bite or two! Thanks!
