Hello! I have to tell you I made a GREAT healthy dinner last night that I had to share, it's totally GF and just at 30 minutes!
Heat your oven to 400.
Butterfly 4 chicken breasts and flatten. Lay a deli slice of mozzarella cheese and two slices of proscuitto (thin sliced salty italian ham) one one half. Fold the other half over and secure with toothpicks (if necessary to confine all stuffing ingredients). Place on a greased cookie sheet. Season with salt, pepper, garlic and italian seasoning blend on both sides. sprinkle a little EVOO over the breast to keep them moist. Bake for 30 minutes or until juices run clear. It's Chicken Cordon Blue and it's excellent. Serve with oven baked rosemary potatoes and salad. Even my beef eating hubby loved it!
PS_Does anyone have a great GF Cheesecake recipe? Hubby's bday is tomorrow and he wants a cheesecake. I would like to steal a bite or two! Thanks!
