Random question....baked yesterday and my flour blend with sorghum, tapioca starch, potato starch and xanthum gum gave me lots of gas and was up during night. Have had this happen randomly but not sure what causes this...any one else had problems with flour blends causing this???

I had a full color dream about eating Buttermilk Blueberry Pancakes with my hands last night! Wow, I think I might be feeling some withdrawal finally. I made my youngest a bowl of oatmeal this morning (conventional oats) and almost licked the spoon without thinking! It's been two weeks, thought I was over the hump - maybe not?

Hi group. So sorry I haven't been on much lately. last night I ate gluten products making myself sick. I know it's stupid because I know what it does to me. I feel bad, bloated, achy, and just all around yucky. I need to get my health back and not do this again.

I have tried GF Bisquick. I thought the pancakes were okay but the biscuits I tried were not, and I used their regular mix for biscuits all the time. They were bad enough when I did it I decided to not bother. Thanks for the ideas. I do eat eggs a lot and do not notice a reaction there, so I'll look to other things.

Had a horrible week at work and didn't sleep well, so I might go back for a wee nap. Have a good day everyone.

we had a family emergency so its been crazy round here..sorry I am so way behind.

I like arrowhead mills baking mix the best (i use a little Bob's Red Mill biscuit and baking mix to stabilize it), GF bisquick seemed gritty to me. I react to too much guar or xantham gum, but its more of an annoyance. I just use about 1/8-1/4 Bob's of the flour amount to my recipes. If the recipe doesnt use yeast I also cut in 1/4 masa flour, great way to stretch more expensive flours and still come out with a nice texture. Just made soft bake cookies last night...Oh my they were still soft and chewy this morning...
and oh my this is not a recipe I can make all the time LOL.

biscuits are next on my kitchen experiment list :)

That is only one of a million symptoms you might find clear up! Let us know how you do!

The GF Bisquick is found here in a number of places, and in the regular pancake section too. If DH likes it, it is good! I have not had gluten in over 2 years so I am not as good a judge. My BFF also said she would eat those happily over the gluten ones. They are lighter ( I add a bit of water and make them a little less dense).

I love Bisquick and it's great to hear they have a GF version. I going to check it out.
I am just exploring the possibility of being gluten intolerant. Going to try to go without and see how I feel. I was getting blotted and full of gas after eating wheat and oats; so I thought I'd give it a try.

Have you tried GF Bisquick? I have only made pancakes with it, but DH eats them and says he can't tell they are GF. I gave him one without telling him! emoticon

Taking one day at a time and online only when my eyes are not hurting and then for short periods. I am wondering if any one has made home made gluten free biscuits and has a good recipe? Making soup this week and biscuits sound good. Barb

Welcome Di...probably something else you are allergic too. Dairy and eggs were probably in your pizza. Look to see what is not in the udi's that is in the other items and see if you can figure it out. I have to be careful with 2 much egg, have to limit my dairy and my body does not like bean flours so can relate to you finding other things than gluten causing you problems. I also use digestive enzymes and Quercitin with bromelain supplements to help my body deal with immune reactions to foods.
Have not been posting to much as having problems with my eyes....hope everyone is doing well on the gluten free road!!! Smiles Barb

People can react to ALL grains, or there could be crossed contamination. You could also react to an ingredient in GF baking like Xanthan or Guar gum. I find I feel best on zero grains. I save it for treats. I had GF Bisquick the other day, and while my pancakes were delicious, I noticed the reaction soon after. Not as bad as gluten, but noteworthy. I strive for a Paleo/Primal diet because of this and my dairy issues.

Hello everyone. I'm new to the group and posted on the welcome thread. I do have Celiac, Diabetes and low thyroid which I'm on medication for. I have been gluten free almost a year and while I have trouble turning down all kinds of things I am good as gold about no gluten, never even tempted to cheat because I feel so horrible and remember how that felt. But I still get 'sick' when I eat 'gluten free' foods, and am wondering what else is going on.

I first noticed it when I went to a restaurant that featured gluten free pizza. Oh I had missed pizza and thought what a wonderful treat. Ordered it, ate it, and was sick as a dog afterwards. The same happens if I have gluten free breads we make from Bob's Red Mill or Pamela's mixes. Oddly enough, the Udi's does not seem to bother me. Anyone else had this happen? I wonder if there is something in gluten free foods that I'm reacting to?

I am not able to be on computer much as having auto immune eye issues and needing to be on prednisone and having eye pain. Computer, TV and lights seem to make it worse. Back to exercising more today which is good but wanted to check in and see what everyone was up to. Take care...Barb

note to Megan...it is frustrating to go through the "I made it gluten free and it tasted horrible or didn't turn out right" times in the going gluten process...I made myself a promise when I started this whole celiac process that I would find recipes for my favorite foods and still be able to enjoy them. My favorite cookbook for this is Carol Fenster's 1000 gluten free recipes and my favorite web site is the glutenfreegoddess.blogspot.com and I have also checked out tons of cookbooks from the library and even gone to the bookstore with pen and paper to write down a recipe until I found just the right thing...I have found that different flour blends taste best for different foods which can be a little time consuming but once I find that just right way to make something it is worth the effort. It will get better...it just takes time. :)

Hi Ladies - I've been MIA for over a week because grad school and work have caught up with me... Something had to give and it's been my Spark Time :( Anyway, knew I could come here tonight for a little support and just to vent, really.

About had a MELTDOWN tonight... over the stupidest thing. I marked 5 weeks gluten-free this past Friday. I tried to make my Little Boy chicken and dumplings tonight using a GF recipe and literally watched the dumplings dissolve into the broth. I wanted to sit down and CRY. It really got to me! I fished out what was left, pulled out that last tiny bag of King Arthur flour in the back of the pantry and made him some REAL dumplings. They are just beautiful and I couldn't even do a taste test.

Now is the time I'd normally say *&%^&% it and tear up a big ol' bowl of goodness. I'm not going to do that tonight. I'm going to stay my course. I've been 5 weeks, I feel awesome, I'm not bloated and in pain everyday.. But this really got to me for some reason. I'm talking, I want to cry over it! How silly! Yes, it's one of my favorites and I love being able to make them for my son, but it's not something to get this upset about... Had some strong cravings this week and this must just be the proverbial straw that's broken the camel's back... I'm not going to let it make me cave... Just had to vent!

They have american and cheddar slices, you have to get the slices or sandwiches really hot to melt them. For the blocks I shred very fine, add garlic, a pinch of salt.. Whatever spices you like. When I'm melting I let the pizza get really hot, then blot with folded paper towel, pushing the cheese down, and broil till bubbly (or cook a little longer in the oven) I find this makes the texture like bubbly melted cheese.

I haven't tried the slices, the blocks of that were weird to me. Oily and an odd texture. Maybe I will try a sliced one if they have it.

Tracey the rice cheese i have seen either has casein in some sneaky form (sodium caseinate orsome bs) or tases awful. I have tried every brand available to me. I just can't do it! Great if you can, and stomach issue free! I would rather eat a pile of cheese and pay the consequences than suffer through vegan cheese and stil have a bit of an issue because there still is casein. emoticon

Good to hear from you Allison! Great idea on freezing! Freezing portions is also a great way to have the "necessities" when you're going to a party or out to dinner.

I never get the updates...ever. So I try to remember to check in once a day but sometimes life sneaks up on me ...or my kids are on the computer LOL.

I'm going to start adding vitamin d instead of waiting for my appt in april to see if my levels are low (which I bet they are again). Up this morning researching how much to take.

Hi everyone!

Haven't posted here in a while - sorry about that. Must have missed a thread link or something because I quit getting updates! Things are going pretty well for me. I've decided to try my gluten free cupcakes again and try freezing them... that way I won't feel like I need to eat them all right away. LOL. I've been eating my "banana ice cream" several nights a week and that's been hitting the spot for something sweet at night (for the most part).

I've been so busy, joined the multi sport club at the YMCA, group activites and concentration on improving in running, biking, swimming..or all 3. I've been enjoying my bike, I love Esmerelda and yet I broke her by accident, she's got an urgent care appt today, hopefully she'll be good as new asap. Yay for an awesome bike shop!

Made gluten free pizza for dinner tonight using purchased crust from bakery and my own favorite toppings...yummy...went hiking with my dh today and enjoyed to sunshine and warmth of the day. We had an ice storm only 2 weeks ago and now it is 60 degrees...thankful for the nicer weather. Smiles Barb

Barb yeah I do tolerate it better, maybe once a month I can "get away with it". If I do too much, it is a constant source f GI issues, inflammation, and rashes!! I am such and addict! I can't seem to leave alone the cheese!!

Megon- sounds like I want to come have some Salmon...glad you are slowly adjusting and finding things that help you. You will get to a point where gluten is not missed and feeling better really makes the whole process easier!!
Cindy- glad you are getting your thyroid checked out....I am pretty good at no dairy but have some occasionally now and don't seem to react if it is just once in a while...I missed real cheese on my pizza and taco's and occasionally want some real ice cream but otherwise seem to do fine. I think once gluten was out of my system and some healing took place the other allergy levels were less.
Hope everyone is finding help for the hives...no fun...Take care all...Barb

Oh y'all! Reading about all the hives made me start scratching here at my desk! WHOA! that must be SO miserable! Sara, praying you get some relief soon!

Last night I made a birthday dinner for my Father-In-Law. I asked my SIL to make the cake since I knew I didn't want to be tempted to lick any of the batter (a weakness of mine! :-)). And besides, I didn't want to gluten up my freshly gluten-free kitchen. SO, I made a wonderful GF meal for everyone. It was so good. Maple-Candied Salmon, Thai House Chili Jasmine Rice, a big salad with homemade dressing, and some almond green beans. It was so nice to do the cooking myself and not have to worry that I was going to accidentally eat something that had wheat in it.

This morning I had a treat of some bacon, but it was funny... because it wasn't all that good to me. And I LOVE bacon. Well, I did. Really, I just ate it and realized I really wanted my usual yogurt with a little honey and walnuts. I had that for my morning snack and it was wonderful! Amazing how I've been eating so much healthier and am actually starting to crave those good foods. I guess you ladies are right... in time I won't even want the things that make me sick.

Interesting to read everyone posting about hives and dairy allergies and thyroid issues. Made me remember when I first was diagnosed with Celiac and so was an auto immune mess. I was on vacation, my eyes swelled and I started having stomach issues...thought I had a flu but or was reacting to some seafood I had and then it just got worse...I had been having skin rash issues for a while but broke out in hives all over. With in 2 months I was diagnosed with multiple autoimmune failure and graves disease and celiac disease and milk allergy to follow. I also agree that having thyroid antibody tests is a good idea. All of these things are so interconnected and we need to treat the whole body. It took close to a year for the allergy hive stuff to get better and I even reacted to eggs for a while. Hope each of you find out what triggers reactions and feel better soon. Hugs Barb

Tracy - I would urge your doctor to do an antibody test rather than just relying on the tsh. My tsh is 1.7 which is pretty ideal actually. I was diagnosed through antibody tests we did after I developed a painful goiter and the goiter ultrasound appeared very typical of auto immune thyroid diseases. hmmm I've been battling monster hives off and on. Never can seem to pin down the trigger. My hair is still falling out more than I think it should, and honestly if I got more fatigued, they'd check me for a pulse.

Sara, I am really going to push my doc about checking my thyroid again...while I don't recommend Dr.Google, after seeing your posts and searching Hashimoto's I just wonder...lots of other symptoms fit in.

I completely understand wanting to isolate, this last round of hives just about did me and. I am not normally a hermit, but I've had to make myself interact with others these past few weeks. I could seriously crawl in a cave and hibernate. Anyway welcome back and I'll keep you and your tests in my prayers. I'm a single mom too + taking care of my mom who had a stroke..so I panic when I start feeling this bad..understand it's so frustrating.

Cindy, thnaks! Oh and I used to test "dairy" a couple of years back and oh my I think the violently tossing my cookies reaction finally did it in for me. It also messes up my asthma so bad, so milk=puking+can'tbreathe+steroids+side effects. I honestly hate to look at the chick-fila cows...scary LOL

Megon- Those frozen GF donuts rock! But it's weird I can only eat one. I'm also planing on a donut making excursion one of these days. We're in the process of trying to recreate Mrs. Fields Peanut butter dream bars. Yesterday I made a brownie like peanut butter cookie base and put enjoy life chocolate on top. I was good and didn't eat but a little...but for a first try it turned out pretty good. I love the experimenting part of this..go have fun in the kitchen. I am so proud of you!!

The hives are apparently very common in early stage hoshimotos disease while the thyroid is failing. I'm going back in for labs on Tuesday and hoping my TSH is high enough for me to begin treatment. My doctor isn't comfortable until it reaches a certain level because many people go hyper before hypo and she doesn't want to risk my health by giving me too much hormone.

Megon - I couldn't help but chime in here. My son has his Saturday morning donut ritual and not being able to partake was a real struggle for me at first. I have found that the Udi Cinnamon rolls are a great replacement but you have to warm them up or they're too hard for my tastes. I also recently heard that Whole Foods bakery has GF donuts. I haven't tried them yet but am going shopping later this week and might. I don't indulge in goodies often but I like to enjoy a weekend treat with my son on Saturday mornings and don't see anything wrong with that

I feel bad that I haven't been participating much in this group for several weeks now. I've been dealing with a lot of testing around my hoshimotos and that always gets me down and wanting to isolate. I'm covered in hives all the time lately and my doctor says that this wont stop until my thyroid fails and they can medicate me. I wish that they would medicate me now. I've been taking benedryl every night to keep the itching down so I wont scratch in my sleep. On the bright side though after almost 6 months GF my IC isn't flaring up anymore and I don't have that pain in my abdomen every day. It's hard being 32 and having multiple auto-immune issues all flare up at once, especially as a single parent. I know that I'm getting better though and I just have to keep making smart choices to help my body heal. I'm really glad this group is here and going to make more of an effort to participate more regularly.

Megon-- So glad you hear that you're doing so well! You seem to have so much energy and a terrific attitude, and that's a winning combo!

As you travel this GF road, you'll probably find that your taste changes a bit and you may find that your cravings change. Udi's makes a GF muffin that's pretty good. I'm sure you'll find something that satisfies your donut cravings! Keep trying those recipes!!

Megon you will get to a place that you won't be so tempted. Especially if you find things to replace your favorites. I never could eat donuts it was a bad combo for me of gluten and sugar and they always made me feel sick after. I haven't tried them but they do make GF donuts. I saw them in the frozen foods Ithink Kinninckinick makes them. There is a substitute for just about everything! I still miss subs and beer, but I am not seriously tempted by them. I just think about them now and again. emoticon

Joanie - OH MY! Just a bite really can mess you up, huh!? Your poor daughter.. trying to be sweet and got glutened! We have to be so careful. That is kind of what I am trying to avoid... that and the temptation.

Barb - That is so cool that you are no longer tempted by the glutenous foods. I hope I get to that place. I just know that in the past I have done great, even for up to 3 months or so at a time, and then fall off the bandwagon with the foods within my own home. I am hoping that this time will be different. I don't want to continue in an unhealthy cycle and I have really built up some momentum! Maybe just getting it all out until I can truly "trust" myself will keep me from giving in!! :-) But my goal is to be like you - happy with what I can eat and not tempted by what I can't.

Allison - oh oh oh! This sounded like I could have written it!!! And Chinese is my FAVE. Do you know what? I got to know the local chinese place pretty well... The son of the two who cook in there speaks perfect English, so I explained to him my dilemma. He was so sweet. He explained it to his parents for me and now they make me a special dish that I love about once a week!! It's shrimp with broccoli and they make it with White Sauce, not Brown Sauce and they put it with steamed white rice. They cook it separately in a new pan for me. They are so precious! They have my complete and utter loyalty... :-) Do you think you could tell one of your local places to fix your food like that?

Well, sweet GF Ladies, I have been 3 weeks GF and am feeling AWESOME. I realized yesterday that I have not had a headache in 3 weeks. I haven't had joint aches in over 2 weeks. I haven't been broken out as bad, either. And the energy! OH OH OH!!! Wonderful! I am able to push through tough workouts, keep going until past 9 at night with my daily tasks and family time, and wake up ALERT for the first time in MONTHS.

Today is my big shopping day. I am actually really excited. I'm going to pick up some GF baking supplies. I can't wait to experiment! I found a recipe for GF donuts... that is the one thing I am SO missing. About once a week I would have a donut before... And I want one SOOOOO bad! I even used to make them from scratch sometimes. So, maybe I can make myself a donut :-) I know I don't need a donut!!! But I'm thinking next weekend I'm gonna make some to celebrate 6 weeks of consistent workouts and 1 month of GF living!! Happy Day to ME!!! HAHAHAHA!

hope you all are well, sorry to pop in and out so quick...busy day. My oldest had to go back to the doctor and pretty much got the same diagnosis..we got no sleep last night.

I'd promised my middle little that we would not reschedule our Friday night Pizza Party, so I rocked out 6 pizzas and breadsticks tonight. I have some crusts in the freezer ready to go when my kids want to make their own quick.

Oh Allison! I do that with dairy but never with gluten! It is a lesson well learned, hold on to that sickness and remember it when you are facing temptation!

So I put on my "idiot pants" the other night and thought... "I feel like chinese food. I've been doing great giving up gluten so maybe my system can handle a little in the soy sauce. Oh what the heck... I'm going to have my crab rangoon too because how much wheat can be in those little wonton wrappers?"

OMG. It was awful. My stomach physically distended in a really noticeable way and I had terrible gas/cramp pain. :( My husband saw the silver lining and said, "Well at least you know for sure that you're gluten intolerant, huh?" True. I don't think I'll be tempted to do that again for a very long time...

I cook mostly gluten free at home but my family still like gluten pasta with spaghetti and so I make them check it to make sure it is done. I will always have some gluten in our home bread and crackers etc. Just have my own area for gluten free foods and gluten foods. At the beginning of my journey it was tough...so wanted a piece of french bread but that doesn't happen any more. I like my own food and am fine being gluten free.It takes time to adjust and we all make mistakes. Barb

My DD was making baked mac and cheese for herself and her boyfriend. She made the same cheese sauce but made rice pasta and regular pasta, to go in 2 dishes. While cooking the pasta, without thinking, she just bit into the regular pasta to check the done-ness. Cramps all night. I can see where it is best to just do the gluten-free cooking! :)

Hope all of you who aren't feeling well are able to get well soon! No fun to be sick.

My hubby and I had a date yesterday and I ate out successfully. Had grilled fish and shrimp, green beans, some rice, and steamed broccoli. It was all very good and I felt great all day! Working on my 3rd week totally gluten-free! I've been amazed at how few cravings I've had here lately... but I think it has a lot to do with just avoiding even being around glutenous foods to begin with! I've been making things for the WHOLE family that are gluten-free... not trying to have something for them and something for me. It just didn't work that way before... I was too tempted!

Tracey- glad you were able to get treatment for infection and an appointment for doctor. You might ask them to put you on a cancellation list and see if they can get you in sooner...that sometimes will move your appointment up if your flexible about when you can go in.
I know it will take some time for my thyroid level to be better but am thankful that what I thought was going on was confirmed with testing. Hard to keep exercising and have the scale not show it. Doctor said my metabolism was a bit messed up and I should feel better soon. Take care...Barb
