In doing some research for DH, I came across a few things I thought I'd add to the kidney conversation (not necessarily high potassium, which may be a transient thing?). For him, I'm thinking
GLOMERULONEPHRITIS or lupus nephritis - both require kidney biopsy I 'think'. Anyway, this article hit some points we could appreciate, having an aversion to gluten and all:

This site also has medical studies articles, so check out different links. I've found similar or related articles re: lectins, so this article sums up what I've been reading.

That could be... You know I've been working on cutting out grains pretty much, except corn perhaps and small amounts of rice, so that may be why mine is not elevated. I don't feel as good if I eat many grains at all, even if they are GF.
I actually feel better if I just eat meat and veggies with some fruits and drink lots of water.

My DH has had high potass before, but not always. He also has high BUN and creatinine - has since I married him. He has high bp, too (his mom was celiac btw).

How many grain carbs do you eat daily? I've read lowering grain carbs helps with bp. However, I "did" think of kidneys when you brought up potassium because of DH. (I "think" I've finally diagnosed him. He hasn't had his phosphorus tested (serum and urine), so I want him to talk to doc about that one.) Have you had urine tests at all? Serum magnesium? How much water do you drink? How's your calcium and vitamin D? Parathyroid hormone? These are things brought up with DH and SIL (who has kidney problems and is obese).

Best to you while you get this figured out. Let us know how it goes.

P.S. DH has gout also (so does his uncle, and another uncle died young-mid40s- of heart attack), so I read up a bit on it: saw this and thought of you cause it mentioned high bp:

My potassium runs a mite low, though... I doubt if it's diet.
You know it sometimes can be medication related. What does your doctor say?
Maybe your body is not clearing it properly for some reason? I hope it is not serious. Good luck.

Has anyone had a problem with this? Besides celiac, I have low thyroid and high blood pressure. My last blood test showed that my potassium levels were too high. I am retesting tomorrow? Does anyone know with this bizarre diet we're all if this could be a problem with my diet? I did notice that Low Sodium V* juice has incredibly high potassium levels. (But I wasn't drinking that before the blood test.) I've checked on line for foods rich in potassium, but none of them are foods I tend to eat. I hope it's not a kidney problem.
